Pesto Chicken Lettuce Wraps

This is a great healthy lunch idea. If packing this away to eat later just place these in between two wet paper towels so the lettuce does not wilt. I love serving this with a bowl of tomato soup, they go very well together.

I found this to be a hard subject to capture :| Maybe I should of cut one of them in half to see how they looked inside when stuffed. :roll:
Anyhoots, DD and I really enjoyed these and so did my granddaughter.

How green was my Valley? - they look perfect. I will sure check out this recipe. I love the photos of a very difficult subject
