Roasted Tomato & Baked Eggs

I was trying to find a way to use up fresh tomato's & on Sunday I was so hungry for breaky on an unusually cold summer's day here in Australia, I enjoyed this ~

That looks like a Sunday Brunch recipe to me! Lovely photos that really sell the recipe.
