Pasta Salads
Post
by Dissie » Tue Jul 15, 2014 12:42 pm
My pasta salads always absorb the mayo. Even so much as the next day, it is so dry you have to add more mayo to eat it. But then it just tastes like mayo. Does anyone have a trick to stop the pasta from soaking up all the coating?

Drizzle the pasta with enough olive oil so it doesn't stick together then add the remaining salad ingredients then your mayo. That is a trick my Mom thought me years ago.

I always add a bit of the mayo first. Toss and let it rest for at least 1 hr. Then, I add the rest. If you let it soak up the first amount; it won't soak up any extra later.
The oil does work as well; I just hate adding extra oil. But, it does work.

When boiling your pasta add 2 Tbls of olive oil to the water, #1 it helps with boil overs, #2 when you drain the pasta it puts a light film on it and then helps with the disapering mayo!

Another vote for oil. I've started mixing a small amount of olive oil (about 2 tablespoons for a regular-size bowl of pasta) plus whatever seasonings I was going to use with the pasta a day ahead of time, then adding the rest of the vegetables or whatever and the mayonnaise later. The pasta not only soaks up the oil but the seasonings as well, and then it takes very little mayonnaise for the salad. Plus it keeps for a few days without having to add more mayonnaise.

I have added a bit of oil to the water before; and, it also works ... I just always think it gives the pasta an odd texture.
I know, just me. Trust me, it probably is. Sorry, JMO guys.

Really awesome answers here! Thanks everyone I am going to try all your suggestions and figure out which one works best for me. I used to add oil to spaghetti noodles, but them heard, the noodles wont absorb the sauce and it just slides off, so I stopped doing that. Guess I let it leak over to other pasta and that was the problem! Thanks everyone I have things to try now!
