In Search of Panini Recipes

I'm on a panini kick . . . we're expecting to a house full over Spring break so planning a panini party one night, so been doing some searching. It's amazing what people are putting together. Will have to make a cookbook of them, including the various dessert paninis.

Use some of that buffalo mozz, some rocket and some thinly sliced meat, like turkey. Add a little basil pesto for flavor.

Here's my opinion.....if I can put it between two slices of bread, I can make it into a panini! :D
