Frozen peppers are so awesome! Whenever I see a sale, I stock up, come home and flash freeze them for ease in making whatever. I use them to make dinner easy. I also buy onions in bulk and do the same. Whenever we eat mexican, its so easy to add frozen onions and peppers to add the hamburger while its browning. Makes life so much easier. Freeze them on a cookie sheet, so they freeze individually and then when frozen put in a freezer bag. Makes it much easier to grab the amount you want when you are cooking! The items wont be a big lump all froze together! ;)

I also make my seasoning blend too. Now, you can buy this; but, when the veggies go on sale ... why not. Fresh is so much better.

I make one with a mix of onions, red, green, and any color peppers cut in strips. Almost like a stir fry mix. As Dis mentioned, Just freeze on a pan, then package up. I often add a bit of jalapeno to this.

I make another bag with - 1/2 diced onions, then 1/2 of a mix of celery, red and green peppers. Freeze, then bag.

They sell this as a seasoning blend; but, it is so easy to make yourself; especially if you get the veggies on sale or at the farmers market.

These are great to have on hand, and add to anything.
