I cook kale like I cook collards. I find that cooking it in a crock pot gets it tender without cooking it apart. I recommend adding some water (not too much), some onion/garlic/chillies (or hot sauce) along with some form of smoked or cured meat, like bacon, ham, or smoked turkey.

I do it high 3 hours, low 6 hours, but start checking it early about 2/3 of the way in. If it gets done before dinner it reheats well.

That sounds like a lovely way to cook it. Deepster, it includes your pork fat, just not fried! :)

I respect that you call it bacon grease.
I remember when chefs first started calling it "bacon drippings".

If you put a pig in the bathtub and let him jump out, the water falling on the floor is "pig drippings". =))
"Bacon drippings" occur when it miraculously rains crispy bacon. =)) =))
I wonder if those chefs had nightmares wondering if they said "grease", people would look at their recipes, screaming "Oh My Gee, it's GREASE! Run Away!"
We could call it bacon bling but it doesn't change what it is. ;)

Bacon grease to me is a pretty sight!

Oh, Sue!!!! That is an EXCELLENT spoonful of "PIG FAT" :shock: . Ya know, I could sprinkle some confectioners sugar over that and eat it as dessert :D . Sure beats the hell outta those ah, errrr, "high" college nights I ate Crisco dipped in sugar :roll: :roll: :roll: :roll: :roll: :roll: :roll:
