I agree with the casseroles. Diabetic cookbooks really help with gaining knowledge on how to cook with less carbs. I don't care for brown rice in a dish, unless it sits overnight. Then its fine to me. I guess it needs to absorb the tastes better for me not to really taste the difference.

I make lots of casseroles, but honestly I don't eat much of them. I make them because they are easy for my family to eat while I am at work, and reheat great. I probably eat maybe half a cup or a cup, then mostly eat veggies. I made my cauliflower broccoli salad today. Made with lite mayo and splenda. That should help. My family thought it was good, so I guess they are ok with the lite mayo. Lots of "lite" things my dh doesn't care for. I bought velveeta lite tonight, but havent used it yet. Trying to cut calories with small changes.
