Well, doctoring it up the way I did made it taste better to me, but my BF didn't care for the additions. I think next time I will try it the way Derf suggested - which sounds like my BF will enjoy (he loves boiled potatoes). I wish he knew how it had been served to him - but he really doesn't know what they did to it, just that he likes it.

I'll be serving creamed corn a few more times in the near future, since it seems to go pretty well with chicken and meatloaf, and my BF loves both. So I'll let you know if I achieve success!

I have eaten and served creamed corn right out of the can. I don't add anything and my family likes it. If your boyfriend likes it this way, let him have it this way. Certainly easier for you. You can always add things to perk it up on your plate. I prefer corn other ways, but sometimes, its a good side dish.

I am going to try that too. I am actually not sure - the only thing I found out is that the corn itself came from a can, not from fresh corn. I didn't think it could be that simple, but maybe that is just all they did in his family. He also likes mac & cheese from the blue box, not homemade at all, no matter which recipe. For myself, I like the homemade versions but will still eat the boxed stuff if it has been given to me. I think both creamed corn and mac & cheese fall into the category of childhood memory foods - you can't really tamper with those ;)

Canned creamed corn is great in soups and casseroles I use it all the time for different recipes we have ate it from the can but it's not up there with favorite way to serve corn :D

I too use it is stews. I don't make casserole too often; but it is really good to use. I do one with spinach, potatoes, creamed corn, and cheese; sounds odd; but it is delicious. I think it was an oreida recipe; but the creamed corn is a must.

I just wish they wouldn't make creamed corn so runny it wouldn't be so bad serving it as a side dish

I've never done it but I imagine you could thicken it up with corn flour or regular flour, it makes a great cornbread though among other things :)

Make by taking fresh corn off the cob, butter, heavy cream. Simply saute in butter, add cream and simmer. You can even use a stick to lightly puree. The fresh corn has enough starch that it will thicken up. Season s/p. Really really good and you can make it any thickness. The heavy cream reduces and gets thick.
