Can I freeze a Cake?

Post by BigDTexas » Tue Nov 01, 2011 3:56 pm

We do not have enough people in our house to eat a whole box cake in any short period of days, SO, I want to know if I can make it, cool it, cut it in 1/2 and freeze half? My husband loves a certain Duncan Hines cake (Orange Supreme) but it is big. I hope that I can solve my problem this way.

Yes, although it is better if you freeze it without icing on it. Some icings will get messy or just taste bad after freezing - but some will be fine. The cake itself will be fine.

It won't last for long - after 1 month it will start to take on a freezer taste.

I only feed 2 people as well, so I either make cupcakes or cut the cake into slices. They thaw really quickly that way. You can make icing and store it in the fridge to have handy to ice individual portions as needed. Usually a slice of cake will be fully thawed in time for dessert if I take it out when I am preparing dinner.

or you could just use half the cake mix and eat it.
then ziploc baggie the remaining cake mix, and use it at a later date.

What I do at work is portion the cake and layer the slices between greaseproof paper or parchment paper, put them into a good thick ziplock type bag, then into an airtight plastic box, I can then take out just what I need and they are defrosted and ready to go in about 30 mins and they will last for up to 3 months this way. (actually I think longer but experiment!)
