I for one have read it wrong and screwed up with too much or too little ... and I'm sure others have too. Just read the recipe carefully.
A google search if you do ...
"8 oz block cheese equals how many cups"
It will come up right and there are many good sites with equivalents.
Cooking as long as I have ... I still check that when I'm not sure, or just won't to verify something. Nothing wrong with that.

Yep - I always have to look over a recipe carefully and make sure the person who wrote the recipe was clear about the measurements. It is very easy to be mistaken. I think it is the biggest reason many people have trouble baking, since it makes a bigger difference if you don't have the measurements right.
