Grated and freeze. Same as above
I also cut in chunks and they are great in sauces and soups
I have made zucchini pickles
As Kiten said, zucchini fritters are fantastic and freeze well
Zucchini dumplings also freeze well and are great in soups
I have pickled, fried, I grill it all the time; wonderful in salads.
Cut them lengthwise hollow slightly and stuff with sausage, tomato, bread crumbs and cheese; they can be a main course or side dish
Fried as an appetizer, with a spicy lemon or chipotle sauce
Zucchini soup is a favorite
Grated and sauteed with onions, fennel is a great side dish
I haven't made it in years; but a canned ratatouiile is really good
Try using zucchini instead of pasta topped with tomato sauce and cheese. Simple thin slice it using a mandolin
Quick pickled slices much like pickles are great on sandwiches
Zucchini also makes a great topping for a grilled pizza. Thin slice and add with onions, feta, sun dried tomatoes and olives. A fantastic light pizza for summer time.

I've never froze zucchini wouldn't it be mushy and watery after thawing?

That is why frozen just isn't good for a crisp texture, saute etc. Fritters, dumplings etc can all be made ahead, either cooked which I prefer and just reheat. But you can also make them without pre-cooking.
