WHAT'S FOR DINNER - OCTOBER 2013
Can you believe it ... October Already!
Hard to believe.
Tonight, having the catfish I didn't have last night, with remoulade
Going to finish up my spud salad from the other night; by doctoring it up with a hard boiled egg, mustard, some pickle relish, and celery; glazed carrots, and a fruit salad.
I will cook up the other 3 fillets, to make catfish patties. And, I also thawed my ham and soaked my beans finally; so, I will be making a pot of bean soup.
Playing catchup after, a crazy day yesterday.

Cooking for both ladies today.
Lady #1: Cashew chicken over rice with a citrus salad
Lady #2: A house fried rice with shrimp, chicken, and pork; citrus salad
Me: Bean soup I made yesterday. No real recipe. A ham bone, a bag of those 15 beans; and, the classic celery, onions, carrots, and potatoes. Turned out pretty good. On the side, a grilled cheese w/tomato (gruyere and a sharp horseradish cheddar). Good comfort food. A big pot, so enough to freeze 3-4 jars for later on.

Felix, sorry about the schedule; I'm sure that makes it hard to make an actual dinner before heading in.
Tonight, I am going very easy, and very old school. I seasoned a 1/2 pork loin last night with a herb pepper crust. Then, in a couple of hours ... into the crock pot it will go. A couple of onions, 1 can of cream of mushroom and another can of cream of celery. Both low salt. Throw a little white wine in. And, I'll serve it over rice with fresh herbs; and, either broccoli or peas and lima beans.
I'll have plenty of leftovers for a couple of different meals.

Tonight, I'm just going to do a simple chicken and noodle soup....with some peas and carrots. I'm definitely in a Fall feasting mode!!

But, I am a soup fanatic too. Always in my freezer or fridge.
