OK, 2 days late. Thx HF for reminding me. I did remember on the 30th, but decided to wait ... then, forgot!

Fish with a jalapeno cream, served over rice; easy cucumber onion salad with a seasoned rice wine vinegar; and watermelon.

I still haven't got to my Indian paneer dish. I will try again today since any grilling will probably get rained on. =))
Had chili cheese conies for lunch with the remainder of my chili from yesterday.

Most likely salmon fishcakes with some corn and salad. I can't believe how much corn we still have in the freezer. All those months of avoiding eating it due to low carbing, now I have loads to use up :lol: I'll be going back to low carb after we move. :D

Also might make the key lime mousse I had planned but completely forgot to make. That sounds yummy right now... maybe I will go get started on that...

Rain too Sue, NO grilled spuds; I'll use up the rice instead. AC guys will be back by 6. I am so looking forward to anything COLD and DRY! :shock: :shock: :shock:

HF, I think in this heat; you might wear off any extra carbs. Besides, corn still is good for you.

I love to use it up by adding to salads. Just a little is a nice sweetness without too many calories.

Also, I love a corn ravioli made with wontons, or a corn spring roll. Really good.

My mention of it being July 2 was too subtle for you, huh? ;)

We've changed tonight's plan. We're going to the Sno-Flake Drive-In after skating practice. We used to go all the time before there were kids because it was on the corner of Highway 50 and the road they lived on before, but we haven't been in years. Typical walk-up window with burgers and chili dogs, but also most excellent ice cream. :D

My brain is too hot to function, NO AC for 3 weeks will do that. I took off all day for the AC guy again, and still not here and it is 6pm.

That, or a blonde moment, mixed with a little grey too!

Well, here's what's laid out before me: Sliced fresh cukes, sliced fresh radishes, sliced Gouda, seedless green grapes, sliced "fresh" peaches, slices of Teryaki seared pork loin. I seem to be on a cooking hiatus, or have become downright lazy. I just want all things laid out before me with minimal cooking involved. What I don't eat tonight, I'll cover, toss in the fridge, and eat tomorrow :D .

I spent most of the day in town with the 80 yr. old neighbor, and that always exhausts me. She's so sweat, but she gets wrapped up regarding the "urgency" of any little thing, and it wears me out being "sweet" as well as "directive"(especially concerning driving) to her. I know that I will eventually be the one to see that her driving days are over, and I'm saddened by that. So, now I let her drive everywhere, while she still can do so "relatively safely. It's always fun, though.

Deepster, what a great thing you are doing. My mom is so active at 74, but I too think about the time to come when I will have to help her more. Right now, she gets angry if you try to help her. Unless its the heavy stuff, then she asks her sons in laws or sons or grandsons. She has many to pick from. Glad everyone visits her often. ;) My mom is so set in here ways too. She has lost strength in her hands, so gets upset if you turn off the water too tightly, she can't turn it back on. I have had many angry phone calls and a drive out to the farm to loosen the spigot that hubby turned too tightly. :lol:

We had a hodgepodge of things. Jalapeno poppers from last night, macaroni salad, chicken, chili and fruit. Very good food, but need to eat those leftovers before cooking again.

Dis and Deepster, it is so nice to help the elderly. I think that is what I love with the ladies I cook for. All very stubborn, not willing to stop doing things; but limitation and healthy just let them only do so much. Dis, especially when family is involved it is even harder. But, just friends, it is fun to do; but sometimes they desire to be independent, can be frustrating.
