Morning Nin and Everyone!
I hope everyone had a fantastic New Years Eve!
I had a great day at their BBQ party and then back for fireworks, a toast, well we had shots, and then the infamous ball. Made it a pretty early night - and back home safe and sound.
Today, I'm starting my spring cleaning. Up north it was always in the Spring, hence after a long cold winter. But in FL, I love to do it after the Christmas Holiday. I will be taking apart everything. Every drawer, closet, garage, boxes, you name it. So I will start that today, and later ... my New Years Day Dinner with my neighbor, and then my son who will pick up leftovers later.
- Turkey bone in breast, with a herb crust and a brandy gravy, sort of my own recipe based on 2 or 3 others
- A basic gravy, with the dripping, shallots, butter, broth, white wine and brandy
- Cornbread stuffing with the usual suspects, and pecans and dried cranberries
- Mashed spuds with sour cream, chives, etc
- The famous green bean casserole, with fresh green beans, but all the other standard ingredients
- No dessert, just a good bottle of wine
I was up too early this morning, so my spuds and stuffing are all done, just waiting to be reheated; my beans cleaned and the rest is a piece of cake.
Beautiful weather today ... 78 and mostly sunny becoming cloudy this evening. Chance of rain and cooler tomorrow, 65. Then at night the high 30's to low 40's and only 56 for a high on Tuesday. Get out the hat and cloves!! That is just down right bone chillin for us Floridians.

"Major" Spring cleaning. Now that is not my cup of tea!
Your Dinner sounds nice. Just the way my family likes their turkey served.
The weather here is still above freezing but I hear we are headed into a "major" freeze tomorrow. I am off to look at the Weather Channel as some people say there is a lot more then just the freeze expected?
Sleeping bodies all over the house so it is time to start breakfast.

Sounds good, KC. I see that you've figured out how to skip "your cake and have it too"!

We'll be starting the New Year with black eyed peas (for luck), cabbage (for prosperity) with bacon and walnuts or pecans, and brined pork tenderloin. Leftover pork (with luck) will become pork sliders tomorrow with your micro mashed potatoes, my tastiest time saver of the year winner.

The temp is continuing to rise here at 40F with rain coming in shortly. Then we are going to drop with rain & snow mixed=ice. How I hate that stuff. Coming into cold weather of 13F with wind factored in it will be 0F.
Making breakfast shortly. Eggs baked in ramekins with ham, cheese, mushrooms & cream. Also pancakes have been requested. Toast & coffee w/liquors.
Lunch I have enough prime rib leftover for sandwiches.
Dinner will be scalloped potatoes, caesar salad & leek/pepper grilled sausage.

So cleaning, but also got my dinner set.
I ended up changing things a bit ...
Corn bread, onion, celery, red pepper and green pepper; a bit of ground sausage - very little (I saved in the freezer) and some apple and pecans. It came out great.
The turkey, I brined, then making a garlic, butter herb rub to go under the skin and on top. White wine and broth in the pan and based as it cooks a few times. Then brushed with apple jelly the last 15 minutes to get it good and brown and add a little apple to the gravy.
Gravy ... Drippings added to my normal gravy mix (frozen), basic stock and herbs thickened. Then I'll add add some apple brandy.
The spuds are loaded. I changed my mind and went all out. Bacon, sour cream, chives, butter and shallots ... why not
Green bean casserole ... I did use fresh beans, I get points for that.
