What WAS on Your Plate & WHAT'S for Dinner 9/14-9/15

YES, IT IS HUMP DAY ... WE ARE HALF WAY THERE!
So, Any Fun or New Recipes on the Menu tonight?

FOR ANYONE INTERESTED ... IT'S NATIONAL CREAM FILLED DONUT DAY!

One of the ladies I cook for; she and 2 friends rent an RV every year and go on a 2-3 week tour. She is a big photographer; so, they like to stop and see the sites. Because of her back and hip injuries, she prefers to eat in the RV; or at a local park vs restaurants.
So, I packed them 3 days of food; then, once through GA, they will start to travel on side roads and small towns.

This is their menu ...
Day #1: Breakfast: Everything bagel halves (salmon, cream cheese/chives, cucumber, tomato, olives, red onion, capers, etc), sparkling juice (mango pineapple juice w/sparkling soda or orange grapefruit juice) - Lunch: A variety of cheese/crackers/hummus dip, salami/mixed deli meat, veggies w/green goddess dip - Dinner: Lobster salad in a puff pasty shell mixed salad greens; balsamic marinated tomatoes, fennel, zucchini salad; mixed citrus salad; mango ice cream - Snack: Peach ice tea (their favorite), spicy nuts and chick peas, trail mix, melon and other fruits

Day #2: Breakfast: Yogurt/berry cups w/granola, mini banana muffins, same juice as Day #1 - Lunch: Chicken barley kale soup, homemade bread w/honey butter - Dinner: Cheesy lasagna roll-ups w/caesar salad, garlic bread - Snack: Same as Day #1.

Day #3: Breakfast: honey waffles w/mixed berry syrup, whipped cream, same juice as Day #1 - Lunch: Spicy black bean cheese quesadilla w/salsa, sour cream, and greens - Dinner: Turkey medallions w/gravy, warm vegetable wild rice salad, cranberry apple relish - Snack: Same as Day #1
Desserts: Also, 3 batches of cookies; ginger snaps, honey lemon short bread, and chocolate chip bar cookies.

*It's all packed up; and, they should be here any minute to pick it up.

Me: I feel like soup tonight; I have freezer stash bean, ham and potato. Maybe a cheesy quesadilla on the side as a dipper. And, I have peaches, watermelon and berries in the fridge.

Devon, beet soup sounds really good; and, so does Chicken marsala pepper. My soup is sounding more and more not so good, lol.

Tonight I made baked parmesan-crusted tilapia, the last of our beets with and orange-ginger glaze and goat cheese crumbles, and carnival squash with brown sugar and butter.

I love beets and that soup by Devon looks so good! Tonight we had sausage gravy with biscuits and some fresh corn cobs

Today ...
Pretty easy for me. Lady #1: Ham steak w/cherry glaze, scalloped potatoes; roasted brussels sprouts

Me: Scalloped potatoes (no cheese in my spuds) w/sausage; grilled romaine w/homemade honey balsamic vinaigrette; grilled peaches for dessert

Carnival squash is kind of like acorn squash. It is a little smaller, has a thinner skin, is yellow with a green speckled "cap" on the bottom like a circus tent at a carnival. They are very sweet and cook easily in the microwave turned upside down in halves, in a glass baking dish with about 1/2" of water, and covered with plastic wrap leaving about 1/4" open at one side to allow steam to escape.
