What WAS on Your Plate & and WHAT'S for Dinner 7/12

HAPPY TUESDAY ALL!!
So What's Cookin?

Well, after 31 bags of yard clipping yesterday; I was exhausted. So, dinner was cheese/crackers, sausage/prosciutto, fruit ... and plenty of wine. That was dinner.

Today ...
Lady #3: http://www.recipezazz.com/recipe/seared ... auce-11345 over a wilted spinach and orange salad; rice noodles.

Me: Back to something Mexican; either a meatless taco salad w/beans, corn, greens, cheese, salsa, sour cream, olives, and avocado - or, I just make make the same thing as a quesadilla w/fresh tomato avocado olive salsa, small green salad - depends what I feel like. I still have plenty of fruit too.

Well right now I'm putting together a fresh strawberry pie, later I'm thinking baked chicken with a side of perogies

Jenn, springs rolls sound delish. Do you do meat or veggie. I make them occasionally; but, I really should make them more often.

Jaclyn, pie ... I grew up in Northern MI. July was strawberry month. I love a good cobbler!! I don't eat many sweats; but, I would enjoy a piece. And perogies ... just give me a plate with sour cream and onions ... and, I seriously will eat the whole dish!

I have some halibut fish and corn cobs to put on the grill for tonight, could be something else I'm not sure as yet :?

KC, those scallops sound delectable! And I'm with you when it comes to pierogies. I'm a sucker for starches.
Tonight I made grilled chicken breasts that was marinated in lemon juice, honey, oregano, fresh rosemary, garlic and pepper. Also had fresh beets with orange/ginger glaze http://www.recipezazz.com/recipe/fresh- ... laze-20055, and corn. For dessert, fresh peach cobbler with whipped cream.

Chaz, sure wish halibut wasn't so expensive. I love it.

Kchurchill5 it's with pork and minced veggies, I only make them once in a while because I end up eating a ton of them :o

Guys, agreed ... Halibut and cod can be expensive; but, I try to buy them on sale. We do get fairly good sales down here; but, still can be pricey, especially for fresh.

Jenn, spring rolls sound wonderful. I don't make them often either. I make baked egg rolls; but, I just don't fry much ... so, anything baked I'll do.
I'll usually go out for spring rolls and Chinese style food. But, I have done a few Chinese parties too, which are fun.

Lovin, chicken sounds good. Chaz, I am jealous of the halibut.
I went to get fresh corn yesterday at the market ... OUT of the white, which I love. So, I have to check today. Last time I got 8 ears; cut, off the kernels and froze them. Great for creamed corn during the winter.
