What WAS on Your Plate & and WHAT'S for Dinner Tonight 4/23
Anyone have any special plans this weekend?
Well, the first day of cooking for fishing cruise went well. I left them breakfast and lunch. Then, heading back to the boat to host a appie party and cook dinner again. Then, I get to spend the night and do some late night or early am fishing.
And, the crew; we don't eat breakfast or lunch with them, but dinner we do.
Continuation of the Fishing Charter:
- After a day offshore fishing. I'm picked up again to prepare an appie party and make dinner. This time, I will be spending the night and doing some late night and early am fishing. I'm sure some guests will be fishing too.
Appie Party: Key lime pomegranate mojitos; crostini topped w/spicy creamy avocado spread and grilled lobster; dried guava or fig fruit spread w/manchego cheese on crispy sea salt whole wheat crackers
Dinner: Fresh oysters w/mignonette sauce; Mojo grilled grouper and vegetable skewers, w/coconut rice and papaya salsa; mini key lime parfaits

Buttermilk Chicken & Gravy
Ingredients
4 Chicken breast, trimmed and pounded thin
2 cups buttermilk, divided
1 cup all purpose flour
3/4 tsp Lawrys seasoning salt
1/2 tsp black pepper
1/4 cup butter
1 family sized can, cream of mushroom soup
Directions
Combine flour, lawry’s, and black pepper. Dip chicken into 1/2 cup of buttermilk then dredge in flour mixture. Melt the butter in a 13×9 glass baking dish then put chicken in the pan. Bake at 400 degrees uncovered for 30 minutes. Turn chicken over and bake for 15 more minutes. Combine 1 1/2 cup of buttermilk with the family sized cream of mushroom soup then turn breast again and pour over chicken and bake for 15 more minutes for a total cooking time of 1 hour. This is DELICIOUS served over biscuits, of the canned variety.

Under 15, you are busy today; it's great to get ahead isn't it. Great job. And, Swiss, the love BAKED fried chicken. I hate to fry; so, what a nice way to have fried chicken and gravy without all the grease of frying. Good job!!
I'm off very soon to my boat where I will be cooking and staying until tomorrow am. Will try to check in if I get some time. Depends if the fish are biting!!
