Happy Sunday Everyone!!!
Well, wedding done, cleanup done; back to normal.

And, no idea on dinner. I still have turkey for creamed turkey, still have marinated chicken for kabobs; and, still have lamb chops. Plenty of sides and salad stuff. I think I will just figure it out later.

I'm really just trying to use stuff I have on hand.

Instead of dinner, today we're having quite a feast for lunch at our daughter and son-in-laws, and we're having...

Grilled Brats & Hamburgers, Amish Potato Salad, Spaghetti Salad, Smoked Baked Beans, Smoked Salmon Dip with Ritz Crackers, Cupcakes, and S'mores Rice Krisipie Bars.

Tonight, it's chicken Teriyaki (made in slow cooker) 8-)


4 boneless chicken breasts, about 2 pounds
½ cup soy sauce
½ cup honey
¼ cup rice wine vinegar
¼ cup onion, chopped
2 garlic cloves, minced
¼ teaspoon pepper
¾ teaspoon ground ginger
¼ cup water
3 Tablespoons Cornstarch
Optional: Steamed veggies
Rice for serving

Instructions

Spray your slow cooker with cooking spray and place the chicken breasts in the bottom. In a small bowl whisk the soy sauce, honey, rice wine vinegar, onion, garlic, pepper and ginger. Pour over the chicken breasts.
Cook on high for 3-4 hours or low for 4-5 or until chicken is cooked throughout and shreds easily. Once the chicken is cooked, remove with a slotted spoon and shred on a plate.
Pour the sauce into a medium sauce pan. In a small bowl, whisk together the water and cornstarch. Slowly whisk into the sauce on medium high heat. Continue to whisk and let it boil until the honey teriyaki sauce starts to thicken. About 2 minutes.
Add the chicken back to the slow cooker and pour the sauce on top stirring to coat. Serve over rice and garnish if desired.

Not to sure yet, it's a toss up between pizza or a KFC clone recipe I've been wanted to try.

Nothing special probably just throw on some burgers on the grill I'm just stopping in to see what's on everyone's menu ;) :D

that's sure is a heck of feast :shock: I've never heard of spaghetti salad but it sounds real good, enjoy!

KC, I was drooling over your creamed turkey option. So I made some chicken ala king over my Mountain High Fluffy Biscuits. It was yummy! Thanks for the idea.

I haven't heart of spaghetti salad either; but, sounds good.
What a great lunch. FYI, you got to have ritz crackers with fish dip!! Good choice.
