What WAS on your Plate & WHAT'S for Dinner Tonight 3/13

Happy Sunday Everyone!!! Am I the only one who is sleep deprived after loosing 1 hr sleep last night?

I hate waking up, knowing I won't see daylight for almost 3 hrs ... but, I do love the late nights of day light.

Well, since if chicken soup day ... I'm making a small pot of chicken noodles soup. I have turkey broth in the freezer, and a chicken breast. I'm sure I can find enough to throw together a pot.

Dinner - I have a pan of turkey tettrazzini in the freezer. Add a small green salad and fruit

Lady #3: Whole wheat pasta w/kale walnut pesto, roasted mushrooms and onion; homemade whole wheat bread w/honey butter; mixed citrus salad

What's your plan tonight?

I wish; I can never sleep during the day - but 5 hrs is about normal ... so, I will live. Maybe just a bit grumpy. The kitties are driving me nuts!!!

FYI, blondeC, I wanted to grill tonight; but, I need to do a little freezer cleaning first. Grilling this week.

Salsa Chicken for tonight (in the crockpot)

2 lbs. chicken thighs, boneless and skinless
1 cup salsa, homemade or purchased
1 cup petite diced canned tomatoes (choose low-sodium)
2 tbsp. taco seasoning
1 cup onions, diced fine
1/2 cup celery diced fine
1/2 cup carrots, shredded (you can leave these out if you are concerned about the carbs)
1/4 cup sour cream, reduced fat (can use regular sour cream if you like)

Directions
Place the chicken in a slow cooker. Sprinkle the taco seasoning over the meat then layer the vegetables and salsa on top. Pour a half cup water over the mixture, set on low and cook for 6-8 hours. The meat is cooked when it shreds or reaches an internal temperature of 165°F. When ready to serve, break up the chicken with two forks then stir in the sour cream.

Sweet and Blinky, sound good; I love the chicken and orzo ... just because I love orzo; a favorite pasta of mine. However, salsa chicken is always good.

Sounds great, Blinky. I grill all year round, since we have a natural gas fed grill.
