Morning ... it feels like afternoon for me. Cats got me up at 3am. Crazy! Oh well.

Lady #3: Mustard and rosemary roast pork tenderloin; mashed potatoes w/gravy; sauteed green beans and tomatoes

Me: Grilled pork tenderloin (freezer stash), perfect to warm and serve w/gravy; herbed pasta; roasted broccoli and cauliflower; fruit

Already made 3 burrito wraps for the freezer - using leftover black beans and corn from the other night. Added some salsa and cheese. Perfect for a quick lunch or dinner.
I wrap in parchment, foil, then put in a freezer bag. Just remove the foil and nuke! 4-5 minutes later, lunch or dinner. Perfect to have on hand.

Leftovers for lunch. Reuben sandwiches for dinner. I need to either buy or bake some rye bread this afternoon though. Got everything else.

Seems sauerkraut is the item of the week! I love reubens too! So delicious!

I have leftover Sauerkraut hotdish, so that's probably whats for dinner, except last night dh came home and said I wanted to go eat pizza! Well he never told me that, so I cooked! I am not cooking tonight, so it might be leftovers or pizza! :lol:

Morning!

Feel lousy today; not sure why - didn't sleep, tired, achy, etc; so, I an easy potato soup is in order. Didn't get to make it the other day.

If I don't get to that - then a salad. I have some poached chicken in the freezer or a grilled chicken breast; so, that over a big salad would be easy.
I have tons of lettuce in the garden; so ... salads will be on the menu most nights.
I also have bacon (cooked in the freezer); hard boiled eggs ready to use, corn, olives, etc. I think I could manage to dice a couple of tomatoes, cucumber and onion.
I think I can come up with something. And, I did make a loaf of bread I made yesterday.

Kim, I had a similar thing a couple days ago. Couldn't sleep, then when I did wake up I felt like I had been a fight all night. Achy, tired, just felt like crap. Guess sleep loss can do that to you. Hope you feel better.

I have been avoiding coming up with what's for dinner. I just don't feel like cooking today, I will probably end up just doing salads. We have leftover spaghetti, so that's probably what will be for dinner.

Dis, sounds good. I feel a bit better; but, still not great. I think the salad is still the plan. NO soup. That can be later.

Just blah, and I hate that.

Hope you're feeling better real soon, Kc. I'm doing soup tonight. Got a good deal on some stew meat today at the market, so I bought 2 lbs. I browned a pound of it and have it simmering now. So, it'll be beef barley soup tonight, and days to come :)

I'm like freaking out right now about the cost of ANY beef . I mean really, the cheapest cuts are between $7-8 per pound...YIKES :shock: :shock: So, anything less than that is a bargain....soup for one pound, and the other went into the freezer. Even the 81/19 ground beef was 7.59 per pound. I see lots of chicken and marked down meats in my future. Luckily I do a lot of vegetarian meals. With the beef and the barley and some veggies, I'll get about 8 meals out of this pound of beef!!!!

Deepster, thx; and yes ... just really run down. I don't require much sleep; but really running on empty lately. I didn't do soup or salad. Had cottage cheese, crackers and peaches for lunch; and a fried egg on toast for dinner. Exciting. Soup can be tomorrow.

The soup sounds good. YES - beef is outrageous. I got a meatloaf mix this week and OMG, like $10. Beef is just outrageous right now. At least like you ... I can get a lot of meals.
I made an $11 steak last night. I got dinner; and, I'll get a couple of sandwiches; and probably an omlette too. So, 3-4 dinners for $11 is ok for a steak dinner. And, especially soup; that is a good stretch of the budget.

I also use more and more chicken lately. Especially a mix of white and dark meats. I don't always, but, do try to do some vegetarian meals as well; especially when it comes to sauces for pasta.
Really saves on the budget too.
