Huh...turns out I have the stuff to make another recipe that needs a picture. Who knew? It wasn't even on my planned list. :lol: So tonight we're having #recipe2407, although I'm cheating and using canned mushrooms and frozen spinach. I'll probably do some frozen mixed vegetables with it since I've got a bit left in a bag, and either some sliced beets or Harvard beets, depending on which kind are not in the basement.

Felix, I love frozen spinach. I use it all the time! Have you ever used frozen mushrooms. I always have a bag on hand. Mushrooms (fresh) go bad quickly unless you use them. The frozen ones are perfect to use in stuffings, or even in a quick saute. I use fresh mostly; but frozen really are quite good; and not expensive either. I like them when I need just a few.

There are some frozen foods that are just perfect to have on hand.
Your chicken sounds good.
Hope your foot is not hurting quite as much. You have surgery coming up. Take it easy on it.

I am not a fan of frozen mushrooms. The texture is just wrong to me...I even pick them out of frozen mixed vegetables. Canned, however, I buy a case of every time they're on sale, both the small and large cans so I have options. :lol:

Yeah, surgery some time Friday (they'll call Thursday to let me know when). There's no time to take it easy before then! Today we're cleaning, Monday I'm out running errands all day, and I've got to start my baking Tuesday because I suspect it's gonna take me three days instead of two this year. I'll rest next week. ;)

Kc, I know what you mean about not sleeping. Yesterday, I didn't fall asleep until about 830am....this morning, it was after 6am. This just warps my days when sleep patterns get so out of whack. I have meds, but sometimes they do no good and other times I just don't want to take them.

Sounds like everyone is eating well and staying warm. Today is simply frigid here, upper 20s and NO humidity. I have been cold all day, even inside.

Tonight I am finishing off a corned beef, cabbage and potato casserole, with a baked sweet potato(butter and molasses).....pretty healthy and comforting food.

Felix, you seem to be getting an awful lot done considering the condition of your foot. But, of course you've been here before I seem to recall. So, I'm sure you know your limits ;)

You know I love them taters, Shapes.

And, Sue, I could do with some of that vodka right now :D

Morning All and Happy Monday!
Nine Days and Counting ... Can you believe it

Last night I ended up grazing. Had some soup during the day; and grazed with cheese, crackers, salami, etc. Perfect for a busy day. I was prepping for another dinner party today.

Lady #4 is having 9 guests for dinner; some from the charity she works for. My friends daughter is helping me again. I'm using my Xmas dinnerware; but, her house is well decorated. I'll just pick up some flowers; and, we are set.

To Start:
Crab salad stuffed baby artichokes - new recipe

Me, when I finally get home; I guess I will grill up some salmon. It's quick and easy. I also have some orzo I just finished cooking. I can reheat that, and add some herbs and lemon; and, tomato slices - my plants are coming to an end, and I don't want to loose any.

Countdowns to Christmas confuse me every year. My first celebration every year is always the Saturday before, and actual Christmas Day is more like a regular day except I usually cook a big meal. So in my world, there are five days and counting. :lol:

Dinner tonight will probably end up being leftover #recipe4701, unless my niece and I are still out and about. We're going shopping today, mostly because she doesn't have to manage kids after school as her husband has the day off, and I have been with my mother 24/7 since the 4th. If we're still out, we'll probably end up at some local bar for food.

Have fun shopping today. ENJOY dinner out if you can ... I definitely would.

My friend has a countdown similar to you. Her family is in; and she starts this Friday. Then, another gathering on Sunday, then they do Xmas Eve like me. She has a week long celebration.
