Morning Gang ...

Last night, a long story, but ended up with eggs and toast last night at midnight; and, work was cancelled.

It's only 66 ish today, very chilly and windy for FL; and, I feel like good comfort food, but I really need to use up what I have on hand first.
So, back to my stuffed portabellos and salad tonight. I also picked up some fresh salmon yesterday; so I have to rework my plans this week.

Ladies #1 and #2 have a church event, so no cooking for them today.

With chili it might be a little more complicated than that depending on when you added the spices.
The pros use several "spice dumps" (when they add the spices) because the cooking time actually changes some of the intensity of the spice. They always add one towards the end to adjust- that may help you figure out the right amounts.

I am roasting cornish hen today. Some sort of stuffing. Quite possibly roasting some carrots with that but I may do something else. I do have some green beans I could do with shallot.

Felix, I do like your potluck freezer selection. I'm all for freezer stuff too.
Cornish hens sound good. One of my favorite things to make. Reminds me of my Dad. He swore NEVER to eat one, until I made one for a dinner before Xmas one year. He gobbled it down. From that point on it was requested!
They are so sweet and tender, I love them.

They are are sale this week too, reminds me I should pick up a couple.

Turns out yesterday's dinner was #recipe6642. I don't really have that big of a freezer (just the one on top of my refrigerator), but Ziploc containers are only about 5 inches square and I can fit a stack of 4 on either the shelf or the bottom. What I really want is a small chest freezer so I can do more meals like that and also stock up on things when they're on sale or in season. When I'm in full-on work mode it's nice to have freezer meals available for both of us since I get to cook maybe once a week.

Dinner the rest of the week is screwed up because of my schedule. But the bonus is I don't have to cook for mom, so today I'll be doing #recipe6072 (with spaghetti, and sprinkled with fresh grated Parmesan) with a bag salad (Very Veggie, with added diced tomato, sliced baby bella mushrooms, and bleu cheese crumbles).

Morning Everyone ...

A chilly start to the day. 52, breezy, and damp. I'm in my leggings, long sleeve tee and fuzzy socks. Even the cats are cuddled up on the bed with me. Definitely a 2 cup coffee day, just to keep warm. Back up to 78 today ... a typical FL weather.

Grilled salmon, I'm thinking http://www.recipezazz.com/recipe/salmon-arm-3476; sauteed broccoli with sesame oil and red pepper flakes. A creamy cucumber, onion salad and homemade bread.

If I get time today, I need to get some small mason jars and make pickled banana peppers. I have 5-6 peppers already ready to harvest.

I have a date after work. :) It's apparently supposed to be a surprise where we're going, but I can make an educated guess based on the fact that we won't be arriving there until about 11:00 pm. He tries, he really does. :lol:
