Last night, a long story, but ended up with eggs and toast last night at midnight; and, work was cancelled.
It's only 66 ish today, very chilly and windy for FL; and, I feel like good comfort food, but I really need to use up what I have on hand first.
So, back to my stuffed portabellos and salad tonight. I also picked up some fresh salmon yesterday; so I have to rework my plans this week.
Ladies #1 and #2 have a church event, so no cooking for them today.

With chili it might be a little more complicated than that depending on when you added the spices.Dissie wrote:I wished I had measured the spices when I added them this time. The pros use several "spice dumps" (when they add the spices) because the cooking time actually changes some of the intensity of the spice. They always add one towards the end to adjust- that may help you figure out the right amounts.

Cornish hens sound good. One of my favorite things to make. Reminds me of my Dad. He swore NEVER to eat one, until I made one for a dinner before Xmas one year. He gobbled it down. From that point on it was requested!
They are so sweet and tender, I love them.
They are are sale this week too, reminds me I should pick up a couple.

Dinner the rest of the week is screwed up because of my schedule. But the bonus is I don't have to cook for mom, so today I'll be doing #recipe6072 (with spaghetti, and sprinkled with fresh grated Parmesan) with a bag salad (Very Veggie, with added diced tomato, sliced baby bella mushrooms, and bleu cheese crumbles).

A chilly start to the day. 52, breezy, and damp. I'm in my leggings, long sleeve tee and fuzzy socks. Even the cats are cuddled up on the bed with me. Definitely a 2 cup coffee day, just to keep warm. Back up to 78 today ... a typical FL weather.
Grilled salmon, I'm thinking http://www.recipezazz.com/recipe/salmon-arm-3476; sauteed broccoli with sesame oil and red pepper flakes. A creamy cucumber, onion salad and homemade bread.
If I get time today, I need to get some small mason jars and make pickled banana peppers. I have 5-6 peppers already ready to harvest.
