I had vegetable beef soup/stew. Not sure what actually the difference is. Mine is watery, so guess its a soup.

I used up some frozen garden stash, so it was a great meal. I think we all had 2 bowls. It was that good. I used up most of my fridge veggies too, so that means shopping soon. It had frozen zucchini, frozen tomatoes, celery, frozen peas from garden, frozen corn from garden, fresh carrots, fresh potatoes, fresh broccoli as it needed to be used up, fresh onion and bell peppers, frozen jalapeno's, fresh cabbage, and stew meat. Lots of spices and such. It was so good, and there is half a pot left for lunch tomorrow. My body was telling me to stock up on veggies. Needed a meal with mostly veggies. Tonight's meal made me happy. I love veggie stew. It was very comforting and made us all happy and in a good mood. Funny how food does that to you. :D

Dis, I love soup as you know. But a good hearty veg soup is just as filling to me than one with beef. Serve with some bread or a roll; and what a great dinner. And, I agree - sometimes your body just craves vegetables; which is a good thing.

I have a g/f who was having health issues with, not only herself, but her kids and dh. They all had to take tons of vitamins because they were lacking it in their diet. And, all over weight. None of them, really enjoyed chunks of veggies in sauces or peas, broccoli, etc. She is a good cook, she just doesn't eat veggies.

Well, one day we got together and I showed her some simple creamed soups, even a cheese soup, potato soup; even a couple of meat vegetable soups, but the veggies pureed or diced very very fine; then added the meat a noodles or barley in. Anyways, she makes these soups all the time now; and not only have the kids, mom, and dad lost weight, but all are healthy. She also adds zucchini and carrots to tomato sauce etc to add more vegetables to their diet.

So, even if you don't like vegetables ... there is a way to incorporate them into any diet.

Morning All!

Another sunny warm day in FL, but it does look like a bunch of you up in the north will thaw up a bit ... at least for a little while.

Today's Cooking ...

Lady #4: I am cooking 2 meals this week, delivered Mon am.

- Chicken and rice, by request. But making my own Campbells soup. Also, adding mushrooms and leeks. Served with roasted rosemary grape tomatoes; and fresh mixed melon

Chicken stock in the crock pot. Already in the works.

Dinner: Southern fried catfish (a mix of a couple of recipes, dipped in buttermilk with plenty of hot sauce and cajun seasoning); black eyed peas, tomatoes, and bacon; and either sauteed kale or fresh fruit. I guess it depends how hungry I am.
Making 2 fillets - 1 for dinner; the other for dinner Tuesday night as a sandwich.

Morning all!

I have a pot roast simmering on top of the stoce, adding in potatoes and carrots towards the end.

Baking peanut butter cookies later and possibly trying my hand at a loaf cake, I don't know I just don't have much success with loaf cakes most of them come out flat and look like a brick :?

Cammie a pot roasts sounds wonderful. Leftovers, can always be turned into a stew.

My mom made me a chicken casserole/hotdish and it was soooooo good. I will post the easy recipe. Can't believe how easy it is, yet tastes so good. Thanks to my mom, I didn't have to cook dinner tonight. ;)

Happy Monday All!

Well, it looks like some of you will be thawing out a bit before the next artic blast hits. 80+ for us the next few days ... more like spring.

This week my ladies #1 and #2 are on a Church Excursion, so I have the week off.

Today. I am brining chicken quarters and smoking them later today. Just using my grill vs my smoker; but slow cooked with my wood box and a water bath. Probably a light BBQ sauce. Grilled maple Sweet potato wedges; and a kale/tomato salad.

Also, need to make up another couple of batches of my Pub Cheese Spread for a friend. He always has something growing in his greenhouse, and usually brings me a surprise bag of goodies. However ... I told him NO tomatoes, I can't keep up with what I have :)

Leftover pot roast ... pot pie, shepherds pie, calzones, meat pies, soup, and my favorite ... meat stuffed potato balls.

Hello What's for dinner gang!

I made a large beef pot roast over the weekend with hopes of having lots of leftovers for a few days, so here are a few of my ideas.

Tonight, leftover sliced beef with gravy and mashed potatoes

Tomorrow (Tuesday) I am hoping for a beef pot pot with lots of vegetables tuck inside :D
