Morning ...

Lets see, we had fritatta, quiche, and I had egg too. I see a theme here.
Chicken salad; love on a croissant; add some nuts and dried cranberries - one of my favorites.

In fact I am making that for one of the ladies next week - a small party. Mini ones; one curry, one with fruit; and one mexican. It's a spoof b'day party (more later). But, his nick name is Chicken - you'll hear more next week.

The weather has been stunning!!! 80's low and sunny, cool am. My tomatoes and garden love it.

Work tonight, but a bit of cooking today.
Ladies #1 and #2: Crock pot beef brisket w/BBQ sauce, macaroni and cheese, green beans w/tomatoes
(mac and cheese in the oven); brisket in the crock)

Me: Grilled salmon w/dill sauce (sour cream, shallot, dill, lemon); roasted red pepper quinoa; garden green salad w/balsamic mustard vinaigrette
(Also, making 2-3 mini pot pies with leftover brisket; and, bag up the rest - all for the freezer)

Having stuffed peppers tonight. They had red bell peppers on the reduced rack today 2 for $1 !!! They're usually $1.89 per pound. There was only one small bruise on one of them. I'm going to cook them anyway, so no biggy.

I love the clearance rack. It is the first place I check. At the Farmers market (every Sat am here); I like to hit that now and then. They are open from 7-1; at 11, they transfer any bruised items to their sale table. CHEAP!

One vendor knows me well; and, he always set some to the side for me. I can go early; and, he will sell me any bruised veggies or fruit.

I care less if there is a little bruise; and, if you are using them for a soup or stew, it doesn't matter at all.

I'd say you good a good deal! Stuffed peppers sound really good.

Speaking of mushrooms; I understand what everyone means.

When making a stroganoff, soup, sauteed, stir fry, etc. I do get fresh; knowing I will use most of them.

I don't like canned; but, I do buy frozen. I don't use them for fresh or a stir fry; but, they are quite good when you need a few.
I have used them in a saute with peppers and onion for a sandwich, or on a burger. They are cheap; and, I really like them, when just a few are needed. Especially when cooking for just 1-2 people.

Haven't made stronganoff in a while, that sounds like it may be for dinner tonight! :)

I love it; don't make it too often either.
I have a 1 pan/pot dish that uses a rough chopped ground beef. It's quick and easy.

But, there are many other good stroganoff recipes as well. Lots of variations which are nice too!! It's always a good comfort food.

I have leftover chili in the freezer, warming that up, might have to add to it to make enough.

How about making wraps with lettuce, cheese; the chili, sour cream; etc.
Or top over cornbread or rice.

Deepster I do the same thing with fresh mushrooms, then decided I will only buy for a meal that depends on them, other ones, I will use canned mushrooms. It works. :lol:

I'm having provoleta, which is a thick slice of aged provolone cheese cooked on the grill, dressed with some olive oil, oregano and hot pepper flakes. And with that I'll have a tomato basil salad.
