Today is freezer meal day, with leftover side dishes. I'm making watermelon rind pickles this afternoon, so the odds my also cooking are slim and none and slim just left town. ;)

I ended up changing the salad last night and it was so darn fabulous I'm having a huge one for lunch. Baby spinach, watermelon, feta, and red onion, drizzled with blackberry-ginger balsamic vinegar and extra-virgin olive oil. I'm also making something (from the Watermelon Board) that made me giggle so I had to try it: Watermelon Donuts. You cut donut shapes out of watermelon, then sweeten sour cream with sugar and vanilla and spread it on top. Decorate with slivered almonds. They say to make them two-layer, but I'm just gonna do one.

Felix, your salad and the "donuts" both sound great. I just finished up a melon yesterday, or I might have tried the "donuts" :D

I'm making tuna/egg salad for sandwiches today, so that's what I'll be doing for dinner. I'm going to do some microwave potato chips for the side....fruit of some kind for dessert.

The watermelon donuts sound interesting .... may have to try that.

I came home from work early today and found that the boys had eaten all the leftovers for lunch. In fact - they had practically eaten everything in the house. So large grocery shop. Got home tired and had pierogies for dinner ( homemade from a local polish deli - that you can buy frozen).

The watermelon donuts definitely sound interesting. Deepster, sandwich and chips sounds good to me.
And Karen, typical boys. My son would bring his friends over; and, NO food left; Vultures!
I have a polish deli that makes theirs too, and, if you order you can get them fresh; otherwise, they sell them frozen.
I boil, them pan saute with butter and onions; then, finish with sour cream and chives. My favorite. Not the healthiest, but OMG is it good.

Morning Everyone and Happy Saturday!

I can't believe it is the weekend already. I wanted to see a movie last night "Into the Storm," but my friends daughter who works there said it was really packed. I'll wait for another night.

Today's Cooking ...

Lady # 3's family is back today. They went to Tarpon Springs FL, a Greek community and the 'Sponge Capitol of the World.' Seriously, it a sponging community. Anyways, they brought back some delicious Greek desserts; so, they wanted a greek 'type' of dinner.
Dinner is at 5, so I am not going to get too much yard work done today.

Grilled baby artichokes w/lemon Feta vinaigrette over baby mixed greens
Greek lemon grilled chicken
Not really greek; but, it sounded good, and they liked the idea - antipasto platter (roasted tomatoes and whole baby white potatoes, marinated cauliflower and mushrooms, mixed cheese, olives), grilled pita, crostini, and crackers; and, their dessert.

Me: Friend for dinner - they are either bringing sushi; or, we may grill chicken (I guess it depends on the weather, and what we feel like)
I have a large spud I could cut in half and stuff (bacon, sour cream, cheese, etc); and, I have some zucchini, corn, carrots, etc. We will see.

My favorite sushi place puts their house sampler platter on special during the summer months (but not the weekend). It is delicious, with all specialty rolls. We may wait till next week for our "sushi fest."

Tonight is two recipes from the American Diabetes Association: Salmon Stuffed with Spinach and Feta, and Zippy Cucumber Crunch (basically cucumbers in sour cream, but with some stuff added). I'm thinking of doing the watermelon-basil-feta skewers again even though mom declared them "weird", because I thought they were fabulous and my basil is now taking over the world. I might just make some for me and give her a bowl of watermelon chunks, though.

Since I had egg/tuna salad for dinner last night, and again today for lunch, I need a break. Tonight I'm going to do fried tofu planks topped with freezer stash baked beans......some sliced fresh tomatoes for the side. Yogurt for dessert will round things out to a nice finish.

I'll finish off the egg/tuna salad tomorrow....Whewww, I made a lot of it!!!

Deepster, I'm doing a tuna/egg salad stuffed in a tomato tomorrow for dinner. Sounded good, you convinced me. Now ... I guess I better see if I have any tuna in the house.

Happy Sunday All!

Woke up at 4:30 after 2 hrs of sleep to 3 cats misbehaving! All 3 or in time out for the day - I won't say any more. :evil: :evil: :evil:

Me, already been to Home Depot and Wally World (Walmart), what else to do at 5am, :(

The end of my yard work today. And, I should be fine through out the Fall. In FL, we have to replant our hanging baskets and pots, about 4x/yr; and, gardens 2x. So, never ending.

In about an hour my g/f is coming over to learn how to make 2 chilled soups (honeydew w/smoked salmon and a spicy gazpacho w/fresh crab), she has company tonight, and wants to serve this for dinner.

Lady #3, dinner with the family; then, she is gone for a week.

Most people do a huge fancy Sunday dinner. Me, I clean out the fridge because the trash goes out tonight. :lol:
