I made my moms cabbage casserole with spicy sausage instead of ground beef and that was awesome. DH liked it better than hamburger! We had fried potatoes with it. Denise, we were right! Its great with sausage!

Friends over for dinner and a movie. One friend is bringing over fresh grouper he caught Fri; and another fresh stone crabs. So, dinner is:
Fresh stone crabs with a lemon, garlic butter
Steamed spicy shrimp in beer with a spicy cocktail sauce
Deep fried grouper with a beer batter and a spicy remoulade sauce
Roasted corn and black bean salad with tomato, jalapeno, tangy vinaigrette
Coleslaw, my version, (cabbage, cider vinegar, light mayo, onion, celery seeds)
Potato salad with a herb and white wine vinaigrette
Chips and a dill pickle dip to start; Dessert is up to someone else as is some fruit too
I made the corn salad, pickle dip and spud salad. I also made the slaw dressing. The boys love to fry and grill, but I micro manage (go figure). Seriously, I do, but they are pretty good at grilling, but I do watch everything. Dip, dessert and fruit and setting the table or bar is up to everyone else.
We all pitch in and we all cook, so there is NOT one person left with the mess. We all clean up too. And PAPER is the way to go. We make it easy for these parties. Newspaper usually on the table for all the seafood and bowls, then just scoop and in the trash. It is all about easy, fun and relaxing.
I did pick up some baileys and amaretto, so that may be coffee after dinner.
As I said ... it is all about easy and relaxing tonight.

1. Moroccan Chicken Stew and home made bread
2. Some of the chicken I used in a Chicken Broccoli Pasta and Cheese Dish, and a tangy balsamic mustard vinaigrette to go with lettuce wedges
3. Beef Roulade with a brown gravy sauce, mashed potatoes, roasted beets
4. Corn Chowder with Bacon, BBQ pork sandwiches
5. Baked Ham, a mix of rolls, mango chutney and a spicy mustard sauce
6. Corn Bread, Italian Pasta Salad
Breakfast ... Made 2 breakfast casseroles, home made biscuits and jam, banana bread and blueberry muffins
Lunch ... Made chicken salad and a pimento cheese spread; and tomato soup for the freezer
I'm taking some salad wedges and a mixed bag salad with some cut up veggies; and a fruit salad for tomorrow. Mid week - I will take over some additional salad and fruit for them. Otherwise it is mix and match. They can pretty much mix and match or use them as I planned. Soup is in the freezer along with the breakfast casserole and some of the muffins and biscuits.

Me: After all that, I am helping a friend out this afternoon, so dinner will be leftovers from the freezer or a salad. I have a hard boiled egg, plenty of greens and tomatoes, cheese, meat, tuna, etc. so that may just be it.
I ate enough seafood last night with my friends, that I don't need much tonight. We pigged out of fried fresh grouper, stone crab, shrimp, butter sauce, dip, chips ..... and a double chocolate chip homemade ice cream. OMG was that good.
I think plenty of caloric intake for quite a few days.
