Oh no I'm sorry KChurchill :oops: :oops: I though that was you that made it..sammy was good in fact it was over the top good, I'm thinking I may make one more later tonight with the rest of the chicken that I have left, grilled cheese.. many possibilities :lol:

Morning Everyone!!

I feel great today ... I actually got 6 hours of sleep!! Holly ____ (fill in the blank!) Maybe the late night dip in the jacuzzi and extra cocktail had something to do with it, :)

Well, a busy day here. Lady #3 LOVED her veal bundles last night; I'm so pleased she enjoyed them; I figured that was something she would like. It's always good when you cook for someone; and they love the meal.

Today's Cooking ...

Lady #1 and #2: Card/Game Night - Subs and Salads
A classic green onion dip with veggies and chips to start; http://www.recipezazz.com/node/19583; and a cross between a mufaletta and Italian Sub. It has an olive spread, marinated Italian veggies, 3-4 classic meats, cheese, wrapped in foil and baked; then a 5 bean salad; http://www.recipezazz.com/recipe/warm-v ... tato-salad; http://www.recipezazz.com/recipe/bean-corn-salad; and, a warm spiked hot chocolate for dessert

Me: Dinner with 2 friends before they have to go to work.
Fried catfish (southern style); black eyed peas (w/bacon, jalapeno, tomato); and sauteed kale with onions and garlic; cantaloupe

Our corned beef turned out fantastic, looking forward to making Rubens with the leftovers.

Not to sure yet about today I did take out a beef pot roast it's frozen solid so not to sure when I'll be able to make it, I had lots of eggs in the fridge so I decided to make deviled eggs, no occasion but we love them! KChurchill your menu for today sounds wonderful :)

Well just having corned beef hash, I can say enjoy! Reubens and hash are my favorite leftovers. There is nothing better than a Reuben sandwich. Although differences in Thousand Island or Russian; I think either one is good. Glad you enjoyed Shadows; enjoy the leftovers!!

Hey, same principal ... why do I make meatloaf ... MEATLOAF sandwiches. LEFTOVERS, :)

Chicken Sandwiches with sliced cucumbers, and also some delicious dips from the local Middle Eastern grocery store. They make all of their own dips (hummus, baba ganouj, parsley salad, etc) and get fresh baked pita made too. Very nice place. I gathered an assortment to have as both lunch snacks and to accompany dinner.

Making 2 of these as hot sandwhichs, one for me one for the dishwasher ( my wife ).
I will be using leftover corned beef from last night and my Russian Dressing recipe.

Talk about a change ...

My peeps canceled on me. Well; one got called in - not on call, but the only one available. The other, g/f's kid (son) was sick, so they were off to quick care, 104 temp; and has chronic ear problems. So it was just me tonight.

Put the catfish back in the freezer, I had just taken it out. Chinese ... I was lazy and just decided ... NO cooking. And it's been about 2 months since I had some.

2 egg rolls; spicy schzchuen (sp?) beef and broccoli; and veggie egg foo yung. I admit ... GOOD. no complaints. 18.00 including a 3.00 tip. Deal huh? I had dinner, and enough for 2 lunches - so I'm happy!

So, dinners this week will get changed around. OH WELL! Catfish another night, no big deal. Things happen.

I am anxiously awaiting a chicken enchilada taco type casserole. My daughter and her friend cooked for us while I was at work. I am soooooo happy its Friday, well now Saturday and I don't have to be back to that shop of horrors until 2:23 Monday afternoon! :lol:

I am making a big pot of vegetable soup tomorrow. I feel like my body needs some serious veggies!

Afternoon everyone ...

Out of town to take care of a friends house and pups while on vaca. Did some fishing, caught and cleaned; now the pups and back home.

Dinner: He left me a stromboli from his favorite Italian restaurant. So that will be half lunch / leftovers for dinner. I also have some leftover chinese from last night too if I want.

Night off in the kitchen.
