I ended up making cheese enchiladas last night since those darned pork chops were frozen solid. :lol: The enchiladas were super easy to throw together too.

So those pork chops will be made tonight along with parsley carrot coins. I think the pork chops have a panko breading but I can't say for sure.

Made my Roasted Sausage and Grapes recipe #33974. Got it from Barefoot Contessa. I am a non-drinker, so instead of using the wine it calls for, I use grape juice and a little red wine vinegar (to every cup of grape juice, use 1 teaspoon vinegar). I also added some chopped onions when I added the grapes. It is absolutely delicious! Made some yellow wax beans from our garden and some leftover mashed yukon gold potatoes, also from our garden.

Meatloaf is in the oven - hopefully this one will turn out right. Third time I am trying to recreate this recipe from a vague family version. I keep getting close, but not quite there yet.

Lovin, your sausage & grapes sounds like something I should try. On the menu it goes.

Invictus, I love cheese enchiladas using corn wrapes & it is one of the recipes I make when I return from a holiday.

Heather, must go search in the freezer tomorrow for the pork chops (Invictus) & gr. beef to make meatloaf. I usually make "1770 House Meatloaf as seen on Barefoot Condessa".

Well, the AC is fixed finally. I'm a very happy girl. Tonight, I had lots of options and I didn't go with any of them.

My neighbor got a new grill and asked me to eat with him as long as I showed him how to make my fish pouches. He doesn't cook much. So we had tilapia in a foil pouch with zucchini, onions, mushrooms and tomatoes; served with a foil pouch of baby reds, and watermelon. He learned 2 recipes; hopefully, he will remember how to do them.

Morning Everyone!

Yes, it is morning. 2:30 am. Actually, I am heading in to my regular job to pick up some paperwork to work on; and then off to my catering job. I managed to get 4 hrs sleep earlier tonight, so I figured I would get a head start today.

Catered Lunch:
A NO mayo spicy chicken salad on a 7 grain bread; and a creamy Indian spiced mango and chic pea salad.

Lady #3 is in Seattle with family for 3 weeks, a break for me.

Me:
Happy Hour with friend to celebrate his promotion. I don't know where yet, but I am sure I will just get something there. He is a fan of Carrabbas, so I am guessing that is where it will be. It's ok, they have some good appies.

Well heck, since you did... :lol: I'm about to go to bed, but I don't know how much time I'll have tomorrow to be online. I seem to have lost several days, and my niece is picking me up just after dinner so we can go to the Wheatland Music Festival. Primarily for Paul Thorn and Ruthie Foster, but I've got a few friends performing as well. Three days of camping in the middle of nowhere listening to music with adult beverages and NO internet! Can't wait! :D

Dinner is going to be a bag salad, but I'm doing to dress it up with some broiled chicken strips, cheese, and walnuts so it's more of an entree. And then I'm GONE! :D

Morning,

Have a good time Felix & take a rain jacket. We are expecting the same weather as you on Friday.

Early here. Have a man coming to measure pool for a new liner this morning. Then going grocery shopping at 6.30pm. This time frame gives me to opportunity to purchase the specials from this week & next week. This is when they stock for Friday morning specials but still have Thurs. specials available. Plus it is a very quiet time at the grocery store. Dinner will be whatever I find of interest.

Tonight I'm making tilapia tacos but I have a kid that detests seafood of any kind so I will also make ground beef taco meat and whatever is leftover will be turned into chiil.
