We had Pizza Hotdish and a side salad. It is my son's 25th birthday and he didn't want mexican, he wanted this dish. We offered to go out to eat but he said no, I want pizza hotdish! I made him a german chocolate cake. I sure love that type of cake!

Dis, I don't mind you asking at all.
For ladies #1 and #2, they live right down the block from one another.
I talk to both on Sun, phone, skype, or email - I give them ideas; which they normally agree with. Sometimes, they have requests.

They eat together most Mondays, so it is usually 1 dish. Wed, is the second day I cook for them; and I often do similar meals; but little differences. One has her book club; and the other usually has company from church over. So, I usually cook 2 different dinners for them.
Now, Fri is their card/game night. And, they always have guests. That is 1 meal for the both of them and company.

I always make enough food for 2-3; they enjoy it on the weekend or for lunch. Both are in relationships; so, they often have company.

Sometimes I do get a special request during the week; but, they understand if I can't do it; and NEVER expect me to either. I have always told them, I don't mind, if I can fit it in.

The other reason for cooking 2 meals at times, it dietary. They are pretty easy going; and not too many special requests; but, one has to have less salt than the other. One, butter is a slight issue, etc. So, sometimes, I tweak 1 ingredient; but make it 2 ways.

Morning!

Although it feels like afternoon to me. Been up since ... forever, :shock:

Hope everyone had a nice Cinco de Mayo! I did make myself a margarita to help celebrate!

Tonight, something simple. Grilled shrimp and peppers over cheesy polenta. I have a small container in my freezer. Blueberry and peach or mango salad.

Tonight I'm making Creative Bacon Chili (recipe from the Loveless Cafe). Probably as a nod to healthy we'll polish off the bag salad with it.

Morning!

Dinner ...
Ladies #1 and #2: Deviled eggs, artichoke dip; Ground turkey sliders w/fresh mozz, roasted tomatoes, and pesto; roasted vegetable salad

Me: Burger (also make a batch for the freezer) w/fresh mozz, roasted tomatoes, and pesto sauce; deli macaroni or some type of pasta salad. I'll have to check the fridge to see what I want to make.

Edit:
Burger, corn on the cob, cucumber type of salad rather than pasta or deli mac salad.

Leftovers? I think it's a great day for leftovers. Everything I've got on my planned menu requires entirely too much effort, and I have no intention of leaving this chair today. The foot is KILLING me lately.

Sorry to hear Felix. I hope it start feeling a bit better. Leftovers, you know how I feel about them - love them. That is definitely a good day for them.

Leftovers are great to have! I always like to have something leftover tucked away. Never know when I am going to need something quick- or maybe just don't feel up to cooking.
I think weather changes are wreaking havoc on those suffering pain- I have been mostly out of it for about three days between my neck, my thoracic spine, my right knee and the ankle that had been broken some years ago.
I still have a recipe and article to get out to an editor today and haven't even started. ugh.
I did manage to make some potato salad. I like having stuff like that too that can be added to bag lunches. If I feel any worse I may hold the chicken off until tomorrow but it shouldn't take too much effort to cook. Beans were frozen/thawed (leftovers) and chix breast cooks right up. Don't need much else, maybe some chopped peppers/onions and a little cheese.

Sue, you are absolutely right with weather affecting those with previous injuries or pain. Both my ankles were seriously injured/surgery, etc - and, when the weather isn't good and the barometer drops. Yep, I do feel it. I have rheumatoid arthritis too; so, I feel that as well. I don't take any meds; but, do a lot of water exercises, and just stretching exercises constantly to keep them all my parts movable. :lol: :lol: :lol:

Felix, I hope your foot feels better today. Dis, careful, some bad storms up your way today.

Sucks getting old doesn't it? I made some beef broth over night in the crock. I had some beef bones to use. This morning it was all done. I don't use beef broth as much as chicken; but, nice to have on hand. Froze them in small ziploc bags.

Today, back to the grill. Maple/bourbon grilled salmon on a cedar plank. Potatoes cooked in a vegetable pan for the grill; and, squash, celery, and carrots in a foil pouch.
