Sounds good to me Deepster. Nothing wrong with an easy night, trust me. Polluck isn't bad; but rarely see it here. I watch for the crab sales and pick up some. I have some in the freezer now.When it goes on sale, it is almost as cheap as the imitation stuff. But; I'm in FL, so I know prices are much different than in other parts. There are actually 2 species of pollock if I remember my marine biology. Both are different, but similar to the COD family.

These guys do a pig, several times a year. Of course they live a bit country, and neighbors are not exactly right next door. It is delicious; but tons of work. Of course they hunt their own as well; so, it is a process. They wake up around 2am to prepare the beast; then, make the bed with is stones, charcoal, wood, banana leaves and seaweed; and it is tended to throughout the day.

I tried to get creative tonight by making a spam stirfry. I had originally been planning to make Spam musubi for lunch the other day, and had already cut up the spam and had started soaking it in teriyaki sauce. It was only supposed to soak for a few minutes, but I had to stop what I was doing that day and popped the spam into the fridge, where it sat soaking for 2 days until I remembered it again.

Anyway, I stir fried the last of the frozen broccoli with some fresh lemongrass, fresh ginger, garlic, then added the diced marinated spam, a spoonful of Hoisin sauce, a hearty shake of white pepper, and a splash of Shao Hsing wine. Served over steamed sushi rice. I'd make it this way again, just minus the marinating. Since the Spam had soaked for so long in the teriyaki sauce, it had absorbed way, way too much salt - otherwise the meal turned out well. I would make it again, only of course not marinate the Spam or use shrimp or chicken instead.

Since I ate way to much yesterday; I wanted a big salad tonight. Romaine, fresh grated parm, croutons; and I made a nice garlickly vinaigrette.

Made my calzones which turned out yummy. NOT pretty; I made smaller ones vs a couple of large ones, so they were not the prettiest, but really good. Served w/marinara. I ate 2 small ones, and have 4 for the freezer.

We absolutely gorged ourselves on sushi for lunch, so dinner is going to be leftover wild boar sausage sliced and reheated, some organic jalapeno gruyere cheese from the Sierra Nevada Cheese Company (not to be confused with the Sierra Cheese Company, they are vastly different things), and some Truckee Sourdough Company rosemary-garlic sourdough bread dipped in olive oil and balsamic vinegar. With some of the blackberry porter we bottled shortly after I got here. :D

Sushi, one of my top favorites. Sounds like you are having a great time! Jalapeno gruyere sounds delicious, and so does wild boar sausage. Great eats.

I seem to recall the last time you and I both made calzones they looked like dogs. What's with that? :lol:
If mine look ugly next time I swear I am going to take a picture and post a recipe and call it "Homely Calzones". ;)

Yesterday we grabbed take-out since the rain has been giving my joints a hard time. I ordered a Texas Tenderloin sandwich and it was really bad. They apparently made their own oversized buns and it was flat, yucky, and stale. I just picked off the pork and ate that by itself.
We were going to grill ribs yesterday but that's a moot point with the arthritis. Hoped for today but it's more rain and rain again tomorrow. Maybe ribs indoors? Or freeze them. I have yet to decide.

Happy Late Sat pm

Well, my g/f and I planned a late lunch to go over plans for a party she is throwing. I was just helping plan it. Instead we decided to hit the Red Barn Flea Market, after the Farmers Market. We had a fresh fish taco there; and stopped for a beer at a local outdoor bar on the way home.

Dinner, I didn't plan much, expecting a late lunch, so back to dinner I guess.
I have 2 already baked potatoes; and may make a quick bowl or two of potato soup. I also have some leftover calzones from last night (I make small hand held ones). I think that will be dinner.

Sue, I so agree with my calzones. Usually when I make them for friends; I get dough from my local pizza place. They make the best and it is so cheap. It has such a great elasticity to it and never tears, I love it. For me; I usually Pillsbury or a tube, it it just doesn't work as well. I also make smaller ones and they are harder to get that pretty half moon. Still taste good however.

I have also used them using frozen bread rolls; the kind you thaw, rise and then I roll them. They work really well for smaller calzones. Also, I love my pizza stone and didn't use it last night, so the bottom didn't get that real crisp texture.
