Definitely leftovers! Turkey sandwich with cheddar and mayonnaise, green bean casserole, sweet & sour red cabbage, and pineapple-mandarin orange dessert.

No real cooking today unless you call microwaving leftovers, cooking!
Dis I did a 16 lb turkey and a 7 lb ham. I always do that.

I LIVE for leftovers.

And it was just me and my son. I use it up pretty quickly believe it or not.

Kim, I need to get smarter about it. I mean, in the past I have made a 16 pound bird and then foolishly thought we would eat it all up in 3-4 days. Didn't happen and I ended up throwing it out. So now I started going smaller. But I should concentrate on making a big one and putting it up the leftovers Thanksgiving night, into the freezer for eating later....makes much more sense! ;)

The next day is when I do mine. A bit more relaxed and can actually look at everything. Several small baggies, enough for 4 sammies or a small dinner with or without pasta or gravy or stuffing etc. And always keep 2-3 bags in the fridge for sammies and snacks. 1 large bag with the bone and some meat for soup. And the rest is all small bags. A mix of white and dark.

My fave ... come home to thawed turkey. Saute in a little butter, s/p until warm. add flour, sherry wine or white then milk to thicken. Now you have creamed turkey. Add parsley and good to go. Serve over Bisquick biscuits. Easy, milk, bisquick, thyme and mix. Bake and serve. Delish! trust me. If you want more ... add peas and mushrooms to the sauce. 10 minutes on the stove. 15 minutes for the bisquits. Add a bagged salad and dinner. And I used the turkey in the freezer.

Add black beans, frozen onions and pepper mix, turkey also from the freezer, some broth and cook. Mix with cooked rice and add to a quesadilla or wrap. Cheese, melt and serve.

EASY!

Leftovers last night. All the fixins, just reheat a plate and serve. YUMM!

Tonight is easy. An open face tuna sandwich. But my tuna salad has capers, celery, olives and lemon. And swiss vs cheddar. On the side pickles and chips.

Pretty basic, but good after all the rich turkey.

Forgot I had to work yesterday, so dinner was Taco Bell at 2am instead of leftovers. Which means we're having leftovers today. :)
