Dis I did a 16 lb turkey and a 7 lb ham. I always do that.Dissie wrote:Leftovers are great! I don't know what we were thinking. No real cooking today unless you call microwaving leftovers, cooking!
I LIVE for leftovers.
And it was just me and my son. I use it up pretty quickly believe it or not.

My fave ... come home to thawed turkey. Saute in a little butter, s/p until warm. add flour, sherry wine or white then milk to thicken. Now you have creamed turkey. Add parsley and good to go. Serve over Bisquick biscuits. Easy, milk, bisquick, thyme and mix. Bake and serve. Delish! trust me. If you want more ... add peas and mushrooms to the sauce. 10 minutes on the stove. 15 minutes for the bisquits. Add a bagged salad and dinner. And I used the turkey in the freezer.
Add black beans, frozen onions and pepper mix, turkey also from the freezer, some broth and cook. Mix with cooked rice and add to a quesadilla or wrap. Cheese, melt and serve.
EASY!

Tonight is easy. An open face tuna sandwich. But my tuna salad has capers, celery, olives and lemon. And swiss vs cheddar. On the side pickles and chips.
Pretty basic, but good after all the rich turkey.
