Luckily I had soup in the freezer. That was dinner. It was good, but hate days like this.
Holy cow . . . if it was me and I'd had a day like this , I'd just drink my dinner! :lol:

That is really awesome that he loves rice and seaweed! My kids would have turned up their noses at seaweed. Well maybe not, dd likes sushi. Just loves it. Awesome that he also loves cucumbers, carrots and avocados.

I was going to mention quesadillas as kids like those too, but panini's sound great.

You could also do taco pizza. Let him decorate. They are great on tortillas. Use 2 tortillas, cheese or refried beans to paste them together, place on a pan and add salsa and meat toppings and cheese, then take out when the tortillas get hard and crunchy, and decorate again with fresh taco veggies. Slice like a pizza. Kids tend to really like these.

I was all over something simple tonight. So, here I was, fridge door open, and assessing. It came right down to "breakfast for dinner". That turned out to be over easy eggs, bacon, "heavily" buttered toast :D , and diced avocado. I just cant seem to break outta this avocado addiction right now, but then again, why should I want to :D :D :D :D :D :D

I've been doing the avocado and eggs thing for months on end. Try grilling the bread, topping with bacon crumbles or sausage crumbles, then slices of avocado, then top with poached or fried eggs (with runny yolks), a little bit of grated cheese and a splash of salsa. Then you will be in my rut. =))
But it's a good rut! :D

Runny yolks . . .doesn't sound like a rut to me . . . a nightmare! Everything else sound great, just can't handle runny eggs!

I have chicken breasts thawing. I think I mill probably make a broccoli, chicken & rice casserole, since I need to use up those ingredients.

Another day of packing, sorting blah blah blah for me.

If they eat catfish, catfish nuggets, are easy and quick. They can be baked too.

I also love to make beef lollipops, just like meatballs, but I form them around a skewer or popscicle stick, then bake them. They are fun to dip in ketchup or mustard.

My son when he was young, loved to try new things, so carrots, celery, cucumber, avocado doesnt surprise me. He didn't like chicken nuggets and hot dogs, lol. They when he got older, he got a bit more picky, from his friends.

I like paninis, because you can really get creative with fruit, different cheese or bread.

Mini sliders are fun, sloppy joes, or tuna salad

And then kabobs which are always cool. Fresh fruit with a honey, vanilla yogurt sauce; or beef kabobs, with an asian sauce; and, of course veggies (depending on what he likes.

He he likes lettuce; I usually make lettuce cups for the kids. Many times, I do a simple chicken salad, or sometimes shrimp. I have even done taco meat, or grilled chicken bites with ranch dressing.

GW, got to have runny yolks, as long as they are nice and warm and the whites are set. However, when I was young ... NO way did I want a runny yolk, Mom used to laugh at me. It wasn't until I had eggs benedict in HS, when my family went to Hawaii. I was hooked and never looked back :)

Morning Everyone!

Where has this week gone? Sometimes, there is just not enough time to get everything done. Under the weather today, just a little sore throat, achy, etc. Took all my vitamins, etc; so, hoping I can beat it. One of my friends had a bad cold, and probably caught it from her.

Today's Cooking ...

Lady #3: Out of town, PA with family

Me: Chicken (leftover from the other night) BLT, with cheese; probably just a fruit salad on the side.

It was the other way around . . . I remember as a kid making eggs in a whole and loving the runny yolks. Somewhere I lost my taste for them. Love eggs benedict but the yolk can't be runny!

Thanks for the suggestions . . . may make the shish kabobs for dinner on Saturday! That way he can 'play' with is food. Just want to experiment and see what we can introduce him to.
