Morning Everyone!

Having some tile repair done on my lanai; so, I'm sort of stuck here. Also, need to hit the pet store; otherwise, work tonight like normal.

I need to deliver lady #3, her dinner by pm. Chicken pot pie; classic iceberg wedge, blue cheese, tomato slices, bacon.

My dinner, sauteed tilapia (recipe tbd - maybe a lemon caper sauce), leftover artichoke casserole; and a cucumber salad.

Morning,

Well, I changed yesterday (just switched things around). I forgot I had 1 last piece of smoked fish, my friend brought me. So, that with some crackers and havarti dill cheese for lunch.
The rest of my sausage, kraut, potatoes for dinner; salad and fruit.

Dinner ...
Ladies #1 and #2; at their monthly charity luncheon.
Me: Back, to sauteed fish, leftover artichoke casserole; a cucumber salad or fruit.

There's a lonely little piece of leftover
chicken in my fridge that desperately
wants to be used up. 8-)
So I'm combining that with cabbage,
carrots,& corn to make a soup.

Kc, your kraut dinner sounds fine with me!!

Shapes...anytime is soup time!!! Sounds great!

I pulled some freezer stash out.....it's a sorta Tex-Mex casserole I got from the "other" site. It has pasta, LOT'S of cheese and sour cream, and of course beef and tomato sauce. The recipe said "6-8 servings". Well, I don't know how those people eat, but this recipe made about 15 servings for me :shock: :shock: .....it was HUGE!!! So, I have a freezer full of it from making it about a month ago :D

I have an avocado that absolutely is one its last day :D So, that'll be a side with some leftover. Yogurt with chopped strawberries for dessert.

Leftover pork shoulder, shredded with some BBQ sauce. I used it to top a baked potato. Served with tomato salad and sauteed squash. Everything was a leftover being used up.

Tonight's Dinner:
Hillshire Farm's has a new type of Polish Sausage,
that's been seasoned with Garlic & Onion.So we're
trying.As sides,a green veggie TBD &

Morning Everyone!

End of the month already. Summer is half way through - can't believe it.

Lady #3 and Me Tonight ...

Club House Steak Salad
A local restaurant makes this, really good - I asked the chef how, he was nice enough to tell me. Pretty basic; but, I wanted to know any secrets.

- Mixed greens (romaine/iceberg), tossed with diced celery, seedless cucumber (diced), scallions, red and yellow cherry tomatoes cut in half.
- Topped with warm grilled thin sliced steak, thin fried onions (not a thick batter, just a flour coating); and, hard boiled eggs.

The dressing ... a ranch base, with added blue cheese, and bacon.

My version:
Romaine only, Only have red tomatoes, NO fried onions, I'll grill mine (healthier); and, gorgonzola vs a classic blue cheese in the dressing.

Hopefully, it will come out pretty close.
