Morning Everyone!

Dinner tonight, same as what was supposed to be last night. Unexpected guest last night, so we finished off the scalloped potatoes, I made a salad and added a little cheese to the potatoes; and ice cream balls dipped in chopped pecans for dessert. Pretty good. Actually a working dinner; I am catering her wedding this summer, so we were going over the menu.

Tonight, the tilapia with pineapple salsa, rice, and zucchini

Tonight will be a mexican ground beef and rice skillet, melted cheese. Easy again :D

Making Cottage Pie the meat part for the weekend. Using my veg soup as the liquid in it. That soup comes in very handy for many dishes.

Dinner, I am thinking breakfast as I have bacon, home fries & eggs from the farmer.

Today the weather continues to be cold & raining. Last night it dropped way below freezing & will do so again tonight.

Pork chili verde is in the crockpot. :) Monterey jack cheese, salsa, cilantro, and tortillas to serve it with.

I'm making...something... This is bad. It's going on two weeks of not feeling like cooking anything, no creativity available, and the grocery sales pretty much suck. :? Maybe I'll just do soup tonight, with optional sandwiches (maybe I can get her to spread some tuna on her crackers instead of a pound of peanut butter and jelly).

We are having cabbage casserole, coleslaw with no mayo and french fries. :lol:

Morning already? What happened to last night? I watched TV until 2, couldn't sleep and up at 5, more TV, emails, bills asleep at 6:30 and up at 7:15. Oh well!

Busy day, more house work, painting, organizing and some gardening if my foot allows me.

Actually cooking for my two ladies tonight, first time for my injury.

Ladies #1 and #2:
Stuffed shells with ricotta, mozz, parm and spinach. Topped with a mild mushrooms bechemel. Classic Italian salad and garlic bread.

Me:
Out with friends to a local bar which holds a fantastic Old fashioned country BBQ every Fri. All day cooked chicken and pork with 3 sauces, grilled corn, homemade slaw and spud salad, baked beans; and all you can eat for 8.50 with soda ... beer is extra. A few guys pick up their guitars and play and it is just so much fun; but the food is fantastic. Everything made on an old wood smoker. Even the spuds are smoked for the salad.
No inside dining, outside only; and don't expect anything fancy. It is really good food and fun.
We go early around 5, because if you don't ... you will wait. It is always packed.

We ended up going to La Hacienda last night for margaritas and fajitas. Boy, was I stuffed! Tonight, no clue. My four girls will be here late this afternoon and there is no telling what we will get into :lol:

Perhaps a fend for yourself night. One of the boys is staying the night at a friends house and there is plenty of chili verde from last night in the fridge. I will be at a minimum cutting up veggies for tomorrow's veggie enchiladas, a new recipe I'm trying out.
