Thx CQ, it certainly isn't healthy; but, it is like the Velveeta Rotel Dip. Addictive.

I usually make it for my friends at Xmas or for a special occasion. I make it ahead on the stove top, just to combine everything. Pour in individual small mason jars and then refrigerate. Put a bow on the jar and then I give it along with a bag of mixed pretzels.

For parties, I used to use my small crock, but it is NO LONGER. Now, I use a small heavy clay pot and just add everything and melt in the oven. Get a variety of the reg pretzels, thick ones, sticks, sourdough, or the soft homemade ones are also really good.

Tonight was an easy semi-homemade meal. I bought a rotisserie chicken, made some gravy from a packet (not something I usually do, but I didn't have time or drippings), mashed potatoes, creamed corn (this time tried the freezer version, was still not the "right" one).

Everyone was happy with the meal and I was happy because I was tired from running all over town today running errands. No big mess for me to clean up. I plan to make stock from the carcass tomorrow and then perhaps some chicken soup.

Morning Everyone!

Cold morning ... 36! But 72 for a high, thank god; I was freezing this morning walking my neighbors dog.

Today's Cooking ...

Lady #1, #2, and Me: Bacon Topped Mini BBQ Turkey Meatloaf I looked all over for what I wanted; and this is pretty close to what I was looking for. Maybe a little tweaking to get it exactly right.

Ladies #1 and #2: On the side they are having mashed potatoes and pan sauteed cream corn.

Me: Chili corn on the cob, and a baked stuffed tomato with kale, fresh bread crumbs, and cheese.

Ugh - I think I caught a cold yesterday while out shopping. One of the cashiers had a bad cold and keeping coughing and sneezing (without using tissue or something to cover mouth, no hand sanitizer or anything). I remember groaning inwardly while at the store, hoping I wasn't going to catch that after I was finally feeling better again.

Well, of course today I have a nasty cold - lots of postnasal drip, swollen glands, feel just awful. Completely different symptoms from my usual allergies. Blah.

Anyway - really glad I already planned on chicken soup for tonight :)

I feel like a stuffed pig I ate so much fattening rich food yesterday watching that football game :o , today all I'm having is a small salad and leftover beef sandwiches from yesterday

This morning I had a leftover chili omlette, tonight I am having leftover chili and tomorrow I will be having a chili sandwich for lunch. My wife forgot to divide the recipe in half!!! :o :roll: :lol:

We are having leftovers. 15 bean soup, nacho casserole, kielbasa and peppers and fried cabbage. Yummmm

Morning Everyone!

Pretty quiet here. I worked the midnight shift; came home, crashed for 2 hours; hit the grocery store; and now, the day is mostly mine to catch up around the house. So, I decided NO cooking.

I still have stir fry left to use up; or meatloaf from last night night. I think stir fry, since I need to finish that first. I have enough for a light dinner with some fresh fruit; and a glass of cab.
