My niece is making a spaghetti casserole that she assures me is absolutely amazing. I shall reserve judgement, because the recipe sounds perfectly nasty. :lol:

Well, once again the weather looked dark and gloomy, so I didn't feel like grilling. Made tacos instead. Now I have some leftovers for lunch too. Easy.

Morning Everyone!

Up until 3am, slept in to 8. At least I got 5 hrs, that is more than usual.
Supposed to get some rain today this pm, 50% chance - better than nothing I guess, we sure need it.

Didn't get to to the market until 8:30, a late start for me. Yard work, planting, raking, and some work on my stained glass. Otherwise, a pretty normal day of just chores.

Dinner:
A version of Cabbage Rolls; mashed cauliflower with feta cheese; cucumber and onion salad, with a simple seasoned rice wine vinegar dressing.

Well, fine...I came home. The spaghetti casserole really was amazing, even though it sounds like something you would never voluntarily put in your mouth! :lol:

Tonight I have to do something with zucchini and summer squash, since two of the three summer squash we bought Wednesday are today half molded and rotted and had to be thrown out. :( Not sure what that'll be yet, but I'll think of something.

Cabbage rolls in the crock, smells delicious. I made a double batch, so I have another batch I will transfer to an aluminum tin so I can deliver it to a friend.

I really had to alter the recipe, as I expected to get to the store today and didn't, so it was a slight improvise, but not too much. They look great, so hopefully all is well. My cauliflower is cooked and ready to mash with the feta and a little stock. I will do that once the rolls are ready. Got a late start, so I'm guessing 8ish. I'm not in a hurry, so whenever is fine with me. But they smell so good!!

I couldn't face turning the stove on (we've hit stupid high temperatures with completely ridiculous humidity again), so I figured if I put the meat in on low now (it's 3am), then added the potatoes and carrots when I get up, I should be able to add the cabbage some time after lunch and be all set for dinner at 6pm. Or, you know, it'll be ridiculously overcooked. Whatever. :lol:

I have a big rack of ribs to throw on the grill along with some corn on the cob. And making my loaded potato salad. Kind of drizzly this morning, hopefully no rain at grill time.
