I am poaching bl/sl chicken breasts as we speak. I'm not sure what I'm going to do with them for dinner, but there are a lot of options. Some will go into the freezer for later.

I have a nice fire going, as it's only been up to 62 here today. I was in town briefly, and it was about 70. If it was 70 here, I'd have no fire, but it sure feels good right now :D

I love to have poached chicken in the freezer; perfect to use in just about anything. Let us know what you end up with.

I think Fall is in the air for many. It is still warm here; but, I can notice, the late pm's and am's are not as sticky. It's getting there. And the pool is cooler too.

It is "chilly". 67-68 inside I can tolerate. 62 inside is a bit on the nippy side.

I actually got out of work in time to make the family birthday party! (My niece is 16, my nephew 14.) Grilled chicken with homemade BBQ sauce, steamed broccoli, potato salad, baked beans, skewers with ham-cheddar-green olives, and four kinds of bread (lemon-poppyseed, pistachio, apple, and banana-walnut). And a chocolate/vanilla/cookie crumble ice cream cake for dessert.

Me, too! Usually the only family party I make is for my 2nd oldest niece since hers is in the summer.

Tonight I'm making a recipe for spaghetti squash I tried last year and needed to tweak considerably (which I'll post if my version is better), along with some chicken thighs marinated in Greek yogurt and garlic that I have apparently also not posted yet. And probably some frozen vegetables for colour contrast.

Morning Everyone!

I can't believe it is the end of September already! My son turned 25 yesterday. Can't believe it. I offered him dinner; but, he said he had plans with Dad. Then Dad bailed on him; I felt so bad. He had Subway! The reason why his father in an EX.

Today's Cooking ...
Ladies #1 and #2 are back from their trip: So, a big pot of bean soup, per request; whole wheat bread; and, a big classic salad

Me: Supposed to be bean soup as well. The ladies, I bought a small picnic ham to use. Me ... I forgot to take the bone out of the freezer; and, to make matters worse - forgot to soak the beans.
Option II: Pork loin, also in the freezer.
Option III: Omelette, or ...
Option IV: Leftovers. I have enough creamed chicken from last night, or enough for 1 more sloppy joe from Sat. I also have just a spoon of the spud salad left. I also have plenty of fruit too.

So, it is a leftover raid.

Felix, I hope you post the squash recipe. I have made quite a few; and I really do enjoy them. I am not sure why I don't make it more often.

Froze the sloppy joes. Actually, if I add a onion slice, and cheese; I could make maybe 2 more.

Just ate the leftovers of the creamed chicken. I had 1 small spoon left, but no big deal.

And, got back from Publix; and CATFISH for 4.99/lb. Good deal, fresh not frozen. Picked up enough for 1 for dinner, 3 to make catfish cakes, and 1 to freeze for later.

So a simply pan fry, remoulade sauce, I think some baby red potatoes with parsley butter; and, not sure. I have some frozen veggies (peas, limas, corn); I also have carrots and broccoli. I guess I'll just pick one when the time comes.
