Morning All!

Hot, humid, and dry. But a light breeze, so I don't mind. I have been running the AC during the night and off during the day.

Feeling a bit better today. My g/f was right ... a 3 day bug. Although, I admit; it wasn't too bad. I could still function :)

Well, tonight I think I am going to cook a bit more than just leftovers or freezer stash.

I have some great plum pierogies from the local Polish Market. So steamed and then tossed with butter and onions; roasted beets and a tomato mozzarella salad since I'm over flowing with tomatoes.

I think tomatoes will be on my menu for the next month every night.

I have some news received this morning. Dd will be home on business in 5 days. The Boy will not be in town. Plus she will be here for my birthday. Win Win!

Now I must get serious about cleaning her apartment also the menu as her friends will be arriving. Just waiting for her itinerary then I can start.

This does not change the fact that she will also return on business at the end of June.

Glad to hear DD will be home. Sounds like you will have fun; especially being their on your birthday.

I really have to make a trip to Sarasota and grab some of those plum pierogies. OMG they sounds so good!!

I realized as I checked this thread that I still have to put my meal in my crock pot for tonight! Ahhhh! I was supposed to start it at 1 - it is already past that!

I come up that way quite a bit. We should just meet and I will bring you some. They are very good. I get up to St Pete Clearwater often and it isn't that much further to meet in between where I am and you are. They are good.

I don't make them often because I like to finish them in butter and onions with sour cream which isn't exactly healthy; but I do enjoy them about 4-6x a year. if that.

I do have another recipe where they are baked in just a little broth, then served with grated cheese which isn't bad, but I love the butter and sour cream. I suppose they are just as bad as a baked spud with butter and sc too.

I just like that I get to have them now and then.

Ok... crockpot cooking. Testing out my brand new digital crockpot. I am making a variation of popular chicken recipe I have seen all over blogs and have been meaning to try. It is chicken cooked in a sauce with wine, Good Seasons, mushrooms, herb cheese, butter, and golden mushroom soup (quite a different taste from cream of but still a canned soup).

I hope it tastes good and I hope my new crock doesn't dry out the chicken. I decided the first test recipes should be using boneless chicken breasts, since that is where I have the worst results in my other crockpot. I put them in frozen to help keep them from overcooking.

When it is ready, I will serve it with fresh snap peas (just steamed) and whole wheat pasta.

That would be cool if we can work that out sometime :) I have been meaning to head down to Sarasota for a while though too - just to see the area. My mom has been telling me to go see it for a while - she loves Sarasota.

Apparently, I'm not eating. Today was grocery day, and she did in fact go shopping. I don't know what the &*%$ she bought, but I saw the empty bags. Nothing I put on the list is in the house, however.

No, that's not true. She bought fresh bread. The cheapest, nastiest, store-brand WHITE bread 79 cents can buy. Which I have always hated and she knows it.

Perhaps I'll see what's in the vending machine when I get to work.
