Hey, 3 out of 4 ... that is progress. Sometimes our plans just don't pan out. You can change, get rice tomorrow; and, off you go. Glad you got the water co straightened out.

That's why I always have backups because things happen way too often. Frozen soup, burritos, pizza, ravioli, tomato sauce, and chicken are my backups. I rarely NOT have them in my freezer. I can usually come up with something.

But, I know that I hate when I forget an item. Drives me nuts. Luckily 2 stores are within 5 minutes if that. Actually 2 miles, but it takes longer to drive.

I didnt cook, we had leftovers and I made the guys eat them! I will have to cook tomorrow. I am thinking Taco's or Taco salad. Easy and I can get more veggies processed. I can't just sit on my butt tomorrow, like I did today. :lol:

Morning.

Just got home from work. A bit tired, my knee felt pretty good; until I had to be on it quite a bit last night. I have some ice on it; and, it feels a bit better.

Not too much today other then catching up on things around the house; a few errands, and actual work I get paid for. And, trying to do another easy dinner here.

I feel like pizza. I have a small plain/cheese pizza. I think I will add some peppers, maybe mushrooms; and, some fresh tomatoes, basil, and extra cheese. Salad with cucumber, olives, and onion and a homemade buttermilk dressing. I have had a craving for one. It's not a dressing I make often, but, it sounded good for some reason.

Made the cookies last night and my BF ate an entire plateful as soon as the first batch was ready. He really loves those cookies :)

We did have tv dinners last night. My BF helped me gather up every bottle of spices/seasonings etc that were scattered all over (I had packed every piece of Tupperware full of spices and other sealed dry foods to conserve space when we moved). We opened up every container, lined up all the spice bottles on the table. He then sorted each type of spice by category for me, while I put them away in groups. I found what I needed to make my own yellow rice tonight and all of the spices needed to bake the cookies. Discovered I had several bottles of duplicate extracts and certain spices. Glad they are sorted now so I can stop buying duplicates when I can't find the one I need.

So enchiladas are on the menu, along with some simple yellow rice. He must really love them, as we only just had the same dish last week!

I'm doing something based on #recipe3956, but I'm making my own Alfredo and using whole wheat flour with Italian-Romano instead of Panko with Italian, then using cheddar and Parmesan inside. Also, I'm going to split the sauce in thirds so I can pour some over the top.

I can't not screw with things. :lol:
