Morning All!

Pretty simple here today. Cooking up some of my ravioli in my freezer. I have some of the smoked chicken and 3 cheese ravioli (made with wontons). A different sauce tonight. Roasted onions, fennel, and garlic; in a bit of olive oil, with fresh herbs. Then, the ravioli is tossed in that. Of course ... topped with parm. On the side, some type of tomato salad; but, I doubt any other veggie. I guess depends how hungry I am. I have fresh beets, broccoli, and always peas or lima beans too.

My ladies are still attending their church meeting/seminar this week; so, a day off.

I am going to make my soup today. Using the black beans from last night, freezer stash of chicken, chicken broth, I'll probably add more onions, celery, red pepper, jalapeno, OJ, lime juice; ginger, coriander; then before serving ... I will add the Caribbean rice to the bowl; and ladle the soup over the rice. Fresh avocado will be diced as a garnish and fresh tortilla chips.

I'm supposed to be making gumbo.
But idk. Bill is coming home early today and we are having a long weekend. I think seeing snow flurries has us wanting to get out and about before the iceman cometh. LOL
There's still a bit of fall color out there. Maybe we will go for a drive and browse antiques in some little town.

Wife took a couple of large chicken breasts out of the freezer yesterday. I have them marinading in garlic,brown sugar, red pepper flakes , salt, liquid smoke, smoked paprika, rosemary, cherry juice and beer. We will do these in the broiler since the wind is so high here instead of on the grill.

I would vote for antiques and a nice bite out somewhere; or a good pot of soup or stew, bottle of wine, and a movie.

I have been nibbling all day....bananas, apples, a few shrimp, avocado, liverwurst, peanut butter. I really have no interest in a real "dinner" tonight. I think I'm just going to keep grazing and be content. At least all this is pretty healthy ;)

Chris Tomlin today. Christian shows don't pay for catering for local crew, so I went to one of the bars around the corner for a Monte Cristo and some cheddar-stuffed soft pretzel nuggets.
