HAPPY ST PATRICK'S DAY TO ALL
Another gorgeous day here, 86 and sun. Going to do a bit of yard work, work on some household projects and enjoy the day. Spring Break down here, so the beaches are packed ... staying clear of that. May strap on my blades and head out east a bit. A little exercise would be nice.
A Green Beer lunch with friends, then -
Dinner ... What else. CBC
I make mine in the crock with Guinness, a few cloves, bay leaf and plenty of fresh spices and peppercorns.
Half way through, add the carrots, spuds and onions. Then, finish it the last 1 1/2 with the cabbage wedges.
Thicken the sauce a bit to serve on the side and of course a creamy horseradish sauce and for my friends, a little good stone ground mustard.
Dessert, I made brownies (yes, a box), but I jazzed them up with coffee, creme de menthe and drizzled a chocolate sauce and a creme de menthe glaze too. They taste good to me.

Bread and brownies are done, the CBC is ready to go.

On the side - Guinness Beer Bread with caraway seeds and caramelized onion bits. Served with Irish butter.

Well, my friend left this morning after we went out for brekkie. I was with him yesterday and he and 3 others came for dinner. It was lots of fun. Too much Irish Whiskey - but a good time.
Another winning weather day 85 and sun, heading out for some yard work, and then some general clean-up/catch-up around here.
I was going to make turkey soup, but I think I'm going to wait. I found out I have to work a few odd hours this week, so I will be on the go for lunch. I can always make it later this week. No bread today either, I still have a loaf in the freezer (white, I made 2 last week)
I'm also going to make some ravioli today. Ricotta, mozz, parm, spinach and mushrooms. Easy to make and great to freeze and have on hand. Just using wonton skins.
Dinner:
Baked Fish and Veggies in a foil pouch ... making a tutorial for this.
Tilapia, zucchini, carrots, onion, lemon, fresh dill and white wine over spinach, wrapped in foil and baked.
Served with rice and fruit.
