I'm doing a noodle, mushroom and cheese frittata tonight. I've just been really lazy the past few days and have practically been living on freezer stash(nothing wrong with that). I'm just glad that during this period I've had something to fall back on :)

Deepster, I do that all the time; especially for 1 person. I made meatloaf the other night. It will make a whole second dinner; sandwiches; and probably another dish as well. And my lentil soup tonight ... 4 packages in the freezer for me.
I freezer dive like that all the time!

Morning!

I might as well get up since I can't sleep. Happy Thursday All. We've been getting some afternoon rains lately - summertime pattern. Hopefully, it will hold off tonight, so I can grill.

For me, I have 1 remaining citrus worcestershire marinated chicken breast in the freezer, so that will be grilled; on the side, wild/white rice blend, and sauteed snap peas and carrots.

Lady #3: Ham and asparagus quiche, spinach salad with citrus; and, whole wheat bread.

Tonight dinner is actually late lunch, because my second-oldest niece is graduating high school with a ceremony that starts at 6pm. So I'm heating up the rest of the #recipe12647 and making some #recipe5727 (sans blackberries). Then we'll probably graze to suit ourselves after we get home.

Morning and TGIF!

This week went by too fast for me - still too much to get done. Well, it has rained all around me; and, still waiting. Could seriously use some H2O.

Today, the ladies have plans in their community. So, just me.
Dinner and movie night w/friend - Leftover meatloaf, reheated and topped with cheese. Sauteed red cabbage, or a red cabbage cucumber salad; and, mashed or roasted potatoes. Dessert, I have coffee ice cream on hand. Nothing special. Just cleaning out the fridge.

My friend never cooks; so, leftovers are a treat for her, lol. She brings the movie; and usually a bottle of wine (she works at a wine shop). So, she gets to try all the samples and the good stuff.

I was thinking vegetarian stuffed bell peppers, but my friend just texted, talking bonfire. So I have no idea if we will be heading over there to hang out and eat off the grill. Love the idea of that. Getting out of the house!

That sounds like fun; my kind of night. But veggie stuffed peppers would equally be as good.

I know I'm making #recipe2487 for tomorrow's dinner, but I'm completely undecided on tonight's dinner. One of the two tubes of crescent rolls exploded in the fridge yesterday (expiration date June 22), so I really should use the other one. I just don't have a plan for it with what I have in the house (I was gonna use one tube next week for dinner and one to make a Nutella dessert).

I think I'm gonna just make something I found on the Pillsbury website that uses ground beef and tomato sauce with crescents for a crust, but I can already tell it wants some tweaking.

Well, my friend has to take care of kids first; one doesn't feel well. So, dinner is just me; but, making a plate for her. She will be over for a bite to eat, and a movie after her bf gets home to watch the kids. Late, but IT'S Friday!

I made a pot of garlic cheese grits last night....enough to last me for a few days. Tonight, I reheated some, topped with a over-light egg with strips of bacon on the side(think polenta, for those who might not know grits). I can fry it for breakfast and top with maple syrup. I can top it with marinara for dinner. It's just so versatile, and I just happen to love it!!!! It made for a nice dinner tonight. I'll have a small peanut butter/raisin burrito later, as a dessert/snack before bed.
