MORNING AND TGIF!

This weekend, lots of yard work; sunset at the beach with a friend ... and a couple of sunset cocktails, lol.

Hoping to make my scallion soup (new recipe); and, pickle some pepper rings.

Back to corned beef.
Reubens, my refrigerator pickles; and, homemade potato chips. A local deli I stopped at yesterday to pick up my marbled rye and swiss for my reuben; makes their own chips; and they are delicious. So, I didn't make them, but they are homemade.

Also, ladies #1 and #2 have their weekly game/card night. Roasted red pepper onion dip, crackers and veggies, reubens, warm potato salad, homemade pickles; and, Irish coffee.

Well, my swedish meatballs didn't get made. Yesterday's dinner was at a local bar/restaurant with my mom and hubby. Mom wanted to get out of the house. She had a shrimp burger and we had california burgers. YUMMM

So this morning, I got up and was still looking at 2 pounds of meat in my fridge, begging to be dinner, so I made meatballs at 8 am. :lol: I put them in the crock pot. Now I was thinking of Swedish, but it changed and turned into sort of an Asian thing? I used chili sauce, a few tsp of end of the jar marmalade, rhubarb jelly and some leftover spaghetti sauce I had in the freezer. I added more spices and its doing its thing in the crock pot. It is sort of sweet and spicy sauce, so that's why I say "Asian type" of meatballs and sauce. I will probably serve over rice. Or it could be egg noodles. Haven't decided.

Dis, sounds good to me ... I would go with the rice, if me ... but, I often change my mine, lol. Chili sauce and marmalade work so well together. I bet it will be delicious.

Sounds like the burgers were delish. I am fond of a shrimp burger myself, sounds great!

Like, actually heat it? I've never heard of that. We would drink it room temperature if we had the flu, but otherwise it's always cold. The combination of ginger bite and carbonation is what soothes a sore throat, and heating it kills the carbonation. I'm on my third two-liter. :)

Tonight mom is going to my sister's for her birthday dinner/corned beef and cabbage. She'll bring me a bowl of leftovers, since I still have the plague. I'm probably going to have either some #recipe10712 or #recipe11990, depending on which one I see in the freezer first.

Yeah Kim, just tasted it after its been simmering and rice is going to be perfect with this! I am going to cut up some onions and bells into strips and add those now. YUMMMY

Morning and Happy Saturday!

Felix, I drank it cold too, but at night Mom would heat it up just like tea, with honey and lemon. Tasty.

Well, I got home around 6am from our midnight fishing trip. Perfect weather for it. Tired, but successful. So, it's a fish fry with the gang for dinner of course.

It's my friends Matt and Randy's boat; and, Matt and his wife are having dinner at their place. They are in charge of, fried and grilled fish, smoked spanish mackerel and hush puppies. Randy and gf, potato salad and plenty of beer; and another couple, corn on the cob and dessert. Me, a citrus fennel slaw; quacamole and a fresh salsa w/chips. I may make my mustard, dill, caper sauce to go w/smoked fish.

All I had was brown rice, and I don't like brown rice, so we ended up making meatball subs. OMG they were delicious! Best I have ever had good!

Today? Maybe homemade pizza.

I made eggs benedict for breakfast. Also some scrambled whites from the extra eggs and some blueberry breakfast sausages I picked up from the market last night when I grabbed some eggs.
Lunch is pork ribs in the crock pot, and corn on the cob that didn't get done before.
Dinner is probably out unless I buy some fresh fish and cook it tonight. I bought some lettuce so I could make salad with that.

I FINALLY found my box of Breathe Easy tea!! My mother has taken it upon herself to rearrange my kitchen cupboards, so I've been losing stuff for months (my spice cupboard is still completely screwed, although I'm slowly getting it back). Another sister and her kids are taking her out for dinner tonight (Steak & Shake, which means they don't care what she wants or should be eating), and she didn't come home with leftovers last night, so I'll be hitting the freezer again. Last night I had the King Ranch chicken, but I also found several pieces of my #recipe7632 so I'll have that along with a couple of pieces of #recipe12302 (just submitted since the site was broken yesterday).

I had planned pizza, then it was taco's, but DH and I went out to eat chinese buffet. It was good, but ate too much of course.

Tomorrow will be the taco's or taco salads. Unless I change my mind again. :lol:
