Morning Everyone!
Gorgeous day here, 85 and sunny; Took an early morning walk on the beach as the sun came up. Doing some work on my front door today, taking apart the trim and replacing it. That will take a while. And,still working on this newsletter project I took on and have another 5-6 hours more before it goes for the first edit.
So, something easy tonight.
Lasagna Roll-Ups:
A mix of ricotta, parm, and mozzarella; topped with spinach sauteed with onions and mushrooms. Rolled up and topped with a "jazzed up" marinara sauce. Trying to use up a bunch of leftovers.
Grilled romaine with a Caesar dressing and garlic bread.

I dunno - I have a pound of ground round in the fridge, bleah. Maybe some homemade goulash with lots of basil.

Tom just called. He normally leaves at 3 and gets home around 4, Once a month his department is told that a 3PM department meeting is held. Today's the day. We will have Texas caviar for dinner tonight. That has been my lunch this week. Tomorrow night he'd be tossing it anyway. He will come up with something for me to have for lunch on Thursday and Friday.

I have absolutely no interest whatsoever in cooking.

I think I'm going to throw some of those frozen broccoli and cheddar stuffed chicken breasts in the oven, heat up some frozen broccoli in cheese sauce in the microwave, and open a tube of biscuits. It's that kind of day, and I simply don't give a rat's behind.

I have changed my mind so much today of whats for dinner. After looking in my crisper, I have decided I need to make
Cabbage Casserole. I will probably serve that with some type of potato, since the oven will be on, I guess baked potatoes.

Just finished 12 rolls. Easy to make and quick to roll up. I didn't even cook the lasagna. Just soaked the no boil in boiling water for 20 minutes. Nice and plyable. Mixed up ricotta, mozz, parm, egg and some nutmeg. Topped with a mix of spinach, garlic and onion. Done in a small bowl 4 minutes in the micro. Spread that on top. Rolled, drop in a casserole with a jar marinara. I jazzed it up with red pepper flakes, seasoning and red wine. Poured over the rolls. Covered and ready to bake. I will post pics later. Literally 15 minutes. Bake and serve. The rest will go in ziplock containers to freeze. I will eat 2 and I have 10 more which means 1 dish of 4 and 2 single servings. Perfect leftovers and all with misc stuff. Kind of dinners, I love to make
