Re: WHAT'S FOR DINNER - JULY 2014
Dis, so glad DH enjoyed the casserole. Yes, dietary changes are hard. And, as you mentioned, it is often the outside eating habits that are the worse. Snacking especially and impulse eating. A good start to the day with fruit, cottage cheese, yogurt; even and egg now and then is important. Oatmeal, etc ... something is better than nothing to start your metabolism.
Then, snacking. Raising, excellent - nuts, kale chips, edamame, small amounts of cheese and a few crackers. And NOT Ritz with all the butter, but a good rice cracker or whole wheat. Veggies and fruits.
And definitely don't deny one of sweets. A treat now and then is fine. JUST moderation. And there are also many dessert that are pretty low in sugar; but, just as good.
TURKEYS, I love them. In fact, 1 in the freezer. I love to cook them year round. I do a whole turkey just for me; Cook, take apart, freeze in individual baggies; and make stock with the bones.
I do love the turkey sandwiches, with cranberry. I'm hooked on grilled turkey, cranberry, and brie. I mix a little horseradish with the cranberry.
A very unhealthy snack ... but I love it - mix mayo and horseradish, cold turkey. Dip and enjoy. Mom and I always did that late at night after Tday dinner. I still do it.
Mom used to make Stuffed turkey balls after Tday. She would take the leftover stuffing, mixed with some of the mashed potatoes, and diced turkey (small diced); and make a ball. Dipped in egg and a little flour and bread crumbs. A very light coating. Chill, then bake. She served them with either gravy or cranberry sauce.
They were to die for! She always made green beans and a salad.
It was a staple Tday leftover dinner.

I have to work an early shift 7-2 tonight vs midnights, woo hoo! So, my dinner will be cancelled.
Ladies #1 and #2 NOON luncheon: Crock pot http://www.recipezazz.com/recipe/spicy- ... pork-10355 (sandwiches), w/a no-mayo slaw and pickled onions; sweet potato salad; watermelon (Pork is done; spud salad too) One benefit of not being able to sleep - I start cooking early .
Lady #3: Grilled http://www.recipezazz.com/recipe/carawa ... loins-2539; grilled cabbage wedges; roasted rosemary potatoes.
Me, I'll grab a bite on the road - guessing subway; I'll take some fruit as well

I roasted the turkey, but stuffed with citrus and herbs; I still did gravy; but, added a little OJ and white wine to make it a bit lighter.
I did a grilled veggie and panzanella salad vs stuffing
Then, did mashed parsnips, celery root, and spuds, using broth, and just a little cream and NO butter. Adding plenty of herbs. The gravy gave it enough flavor.
Then, did a fresh beet salad with oranges and mixed greens.
-------------------------
Sort of a play on Tday, just a bit lighter. And, it fits summer.
In fact, her parents are down in 10 days; and I will be making it again for them.
They come down 1x/yr; and they do a Christmas in July. They put a tree up and everything. But, being 90 out; this is what they have for dinner.
Oh, I do have to make a classic pumpkin pie. NO changing that.

End result is I can't cook anything I planned, so even though she'll hate it we're having last night's dinner again tonight. It ended up being frittata squares in a 9x9 pan by the time I got done with it, but it was really tasty. And I'll serve some of the stir-fried broccoli even though she didn't like that, either. So be it.

I'm very lucky that my store is literally walking distance; but, I understand. I have left my list many times at home, in the car; or lost in a grocery aisle. But, I would definitely pick it up if I dropped it.
I came home this weekend without 4-5 items; one being TP. I had to do a run for that, and got the other items. But; at least 2x a week for me. I usually do one run the day the same day as the farmers market.
But, I never mind the same dish 2 days in a row.

My turkey is done, stuffing in oven, taters are waiting to be mashed and we are having frozen corn from last summer. I should have made dinner rolls, but I got lazy! Laid on the couch for a couple hours.
