More zucchini ... it is that time of year. I know it well. Felix, sounds good - veggies galore. Karen, love zucchini pancakes or fritters.

I'm sticking to my soup and sammy. Work being done outside with a friend; so, busy. Dinner will be easy!!

Morning -

Very productive day yesterday in the yard; another day at Home Depot for some home repair stuff. Otherwise, a day off from the office; but, will work from a few hours to catch up.

Today's Cooking ...

Lady #3 comes home late today; so, I thought I would drop off a small pot of tomato soup and a loaf of sourdough bread

Me: A variation of a recipe from realsimple.com - It's a roasted tomato dish with shrimp and Feta. I add wine, roasted red peppers, a little spice, etc. It's a really simple dish.
On the side; my Greek rice (leftover from Mon), and I'll toss in some spinach too.

Last night, I got home on time for a change and DH treated me out to dinner. We went to a really nice italian restaurant , sat at the bar, had the best caesar salad in the world and split a small pizza. Lovely time.

Zucchini cakes tonight !

Tonight will be more vegetables, because I can! My poor sister called this morning to see if I needed any green pepper, tomato, or cucumbers because her garden is in overdrive, but I've got them coming out my ears already. :lol:

I'm creating a kale and bell pepper frittata along with Sunshine Broccoli Salad (from Sweet Tea and Cornbread), and Soba Noodle Salad (from love.life.eat, which is supposed to also have kale but mine wilted and won't work for salad, so I'm using some of the head lettuce I picked up).

Felix, us too, too many cukes and tomatoes!

I was going to make Derf's mexican pizza's, but decided on just tacos. I don't want to turn on the oven. Hot one today!

Dis, hot here too. 94 and 108 heat index - steamy. Lucky, most of my yard work done yesterday. Not too much today.

Tacos sound good. This time of year; a few farms have their produce; but, in green houses part time. Just cant grow too much right now. TOO HOT. But, we do get good corn, maters, and squash, cucumbers etc.

I can't wait until next month to plant the veggies.

Tacos are always a great go to.

Tonight it's angel hair pasta in browned butter with tiny scallops and garlic....a bit of shaved parm on top. For the side, steamed shredded Brussels sprouts(an item I hadn't seen in the market before). I'll have yogurt a little later for a snack.

Morning!

How is everyone today? I guess a lot of the US, is pretty toasty this week. I know I'm boiling at 96 and 108 heat index. Typical, but, it is hot.

Today, pretty easy for me. Lady #3 is back in town; so, a request by her for a chicken florentine stew. Me; I have a pasta casserole dish in the freezer with meatballs; which, I will add some olives, roasted red pepppers, etc. So; not, much for me today. I will make a nice green salad for myself as well.

I typed out a whole thing, but the site is being incredibly stupid today so it got lost in the ether.

Tonight is a new recipe I put together last night I'm calling "Farmstand Strata". Garlic sourdough bread, candy onion, green pepper, yellow pepper, red pepper, bacon, cheddar, and eggs whisked with sour cream and herbs. With it I'll serve the last of the broccoli, cherry tomato, and watercress salad.
