Morning!

My Mon went all to $#ll! My son stopped by (which was good), the tree trimmer came a day early; and, I got called into work early.

Now, already made a pot of soup to take to the boys at work; and, cheese bacon and tomato sandwiches to grill. So, with no time to grill my dinner; I made an extra sandwich for me, and a quick salad.

That was my dinner last night - so, back to my chicken, squash, and salad on the grill tonight. Hopefully, today will go a bit smoother.

I was going to grill out chicken but changed my mind to make my potato casserole. I don't think I have ever posted it here. I have to experiment today though, because the old recipe used cream of whatever soups. I will try to duplicate my own and thicken them up. We will see how it goes!

I'm making a sort of a layered breakfast quiche, with a grated potato crust, cheddar, bacon, Vidalia, and whatever else I have lying around I've forgotten about that sounds good. Probably some fresh chives, definitely one of my new spice mixes from the farmer's market.

A voice from the past . . . it has been awhile! :o

Tonight I'm going to try my hand at making 'stuffing' waffles and top them with leftover pork tenderloin with a gravy which includes cranberry sauce. Forgot about a quart of strawberries I bought Sunday so think I better use them . . . will make a salad with fresh strawberries and top with a chocolate & strawberry balsamic dressing.

from waffles and pork,

YUMMY! sounds good.

Tonight, I'm on track. So, nothing in my way tonight; been a good productive day.

I have a pot of giant limas cooking with a smoked ham hock right now. A little later I'll add some carrots, onion and kale for a super large pot of soup!!! Since it looks like the next several days the weather is going to be more like October than July, a big pot of soup will be extra good and there will be mucho left over for the freezer. :D

Greek yogurt and fresh strawberries for dessert.

Sounds delicious. I love the fruit for desert. I do that often.
I often add a little mascarpone or as a treat frozen yogurt. I just found the Oikos (sp?) frozen yogurt. I like something NOT too sweet, so that is something I like with a little fruit as a treat.

I keep cool whip too in the freezer. A little dollop is great with berries.

Love the soup!! Even when it's hot, I love the soup thing.

Every ones meals sure sound delicious!

Deepster, sure feels like us northerners, have been cheated out of a summer! We lost our spring, then now cold in the summer! WTH? Sick of it! I was remarking to my mom the other day, this is the weirdest 3 years. We haven't had a spring in that long. It goes from being 30° one day to 80° the next. My garden can't catch up, it wants a longer growing season, but heck it's already getting cold! WTH?

My casserole was delicious! DH said even though you changed the recipe it was still good! OMG, he has no idea! He thought the change was the red peppers I added instead of green. All I had was red and orange peppers, not green bells. He actually said, well I saw the red things and my heart sank knowing you changed the recipe. He didn't know that I made the cream of whatever soups from scratch for him. I didn't tell him either. He ate it. He can be so frustrating! :lol:

Oh man . . .I share your frustration! Have been contemplating suggesting that we take turns fixing dinner so he can understand my frustration . . . but, decided that's not such a good idea . . I hate canned soup!

Yup Galley, since his heart attack we have been having to eat a bit different, but honestly, we were already doing the right things, he was just eating outside of the household food, eating badly. Like he would eat a whole 8 ounces of a cheese block in one night. He loves cheese and would slice off a hunk, eat it and then come back an hour later and slice off another hunk, etc...

He would stop at McDonalds and eat their 99 cent burger as a snack, just stupid way of eating. But then he would eat good things at home. The dietitian told me that I was doing a good job, already doing right, he wasn't behaving! :lol: When we had the class I told her how I cook, she was amazed that we already make our own bread, etc... I even shared the popcorn thing. Making in the microwave with no oil. She loved it and was going to share with her patients. She had never heard of it. Hubby would eat cake or pudding and say to me, you are snacking on raisins how can that be satisfying! Now he knows! Its the same sweetness, but such a better choice! He is finally on board! It was hard at first and I did make him cupcakes the other day! Helps him to get one serving, not over eat sweets!
