I spent most of the day in town, so I am way too pooped to go to much effort for dinner. I'll do a country ham biscuit, 1/2 baked sweet potato with molasses and butter, with some steamed okra. Most of this is just left-over stuff, so it'll be an easy meal to put together....then get to bed early to read and rest.

Playing a little catch up...
Sunday, I made BBQ chicken pizza for the hubby. I cheated on my pizza - individual pre baked crust, topped with pesto, mozzarella, roasted red pepper, spinach and crumbled goat cheese.
Yesterday, pan-fried pork chops and canned veggies. I need to find some quick sides to break out of that weeknight routine.
Tonight was beef stew and cornbread.

Morning Everyone!

Deepster, a ham biscuit sounds good to me. I was thinking of making creamed ham over biscuits for dinner one night. I haven't made that in a long time.

Misa, the pre-made crusts are convenient; and, work just fine. Sams Club used to sell premade crusts, but unbaked. You could get a box of 6 or so. They were really good. All rolled our, perfect, just top and bake.
Now, I get mine from a local place. I usually keep a couple on hand.
Your pizza sounded delicious.

Rice, I love to make and freeze. I usually have a bag in the freezer. Just heat and done. You could add olives, herbs, tomatoes, scallions, citrus zest, etc.
Couscous, I love. Just add boiling water; but, again can be flavored.
Canned potatoes ... I know canned. But, you can add a shallots and saute; and in 5 minutes, done!

There are also a few veggie combinations that aren't too bad using frozen veggies that are quick
- creamed corn - lima beans with peas and a seasoning veggie blend - sauteed cauliflower or broccoli with bread crumbs. All using frozen, and all done it just 5 minutes.

Just a couple of thoughts.

My dinner ... well, actually a late lunch today.

I planned chicken, but I promised to help out a friend.
One of my poker buddies, his sister (who also plays with us now and then) is getting married; and, wants to host a party for her future family. So, we are meeting to start planning.
A late lunch at Carrabbas; it is close for both of us. I'm sure I might bring home something; but if not, I have smoked salmon, fruit, cheese/crackers, even a couple of hard boiled eggs. I won't go hungry!

Besides after 2 nights of CBC, I don't mind a NO dinner night, lol.

I am making CBC for Lady #4. She just got in town last night. She missed out, so CBC for her tonight. It will cooking away shortly. It will be delivered after my lunch. The basic, plus soda bread.

Deep, the sweet potato sounds so tempting! I just love them.
Misa, love the sound of the pesto, mozz, peppers, spinach and goat cheese on a pizza. I can burn through a lot of pesto making pizzas! And corn bread, I have asoft spot for that.
Kim, Carabbas sounds nice. We have one very near here- one of the few moderately priced places I can order cannellini.

Lunch today was just a simple caesar salad with a little tomato, and sliced almonds instead of croutons.

For dinner I have some country ribs. I'll need to make some bbq sauce for those, and might make a new batch of ketchup while I am at it. I have some corn- first of the season from Florida. With that, maybe some cucumber salad since I have a cuke in there. Hopefully the rain we are getting eases up so I can grill without being dripped on. It's chilly out and the sky is really grey. Feels much colder than it is because of the damp.

Sue, dinner sounds nice. Always love ribs ... I still have some in the freezer I need to pull out; and haven't.

Do you have your ketchup posted, I have one recipe; but, that is something I love to make for special occasions. That damp cold is the worst ... so much colder than it actually is

Tonight I'm having Nyquil. And hot tea. And maybe if I'm still feeling peckish (and awake) some chicken and stars soup.

Thank heavens, it went under me. We got about 1/4 inch over night, then NONE of the 4-8 inches they were predicting! Sometimes, good things happen in weather predicting! :)

I made beef vegetable soup last night, so there is plenty left for supper. I have a dr appt at 4:30, so that has to be whats for dinner!

I will be having what is called a "Sweet Lorainne" around here. That is a Ruben made with Corned beef, swiss cheese, coleslaw, and Russian dressing. I will be adding some bacon also. All on rye bread.
