Trout and Bass ... my two favorites of all time. I used to catch them up in MI all the time. Still love them over saltwater fish.
Sounds good. Dinner was nice tonight; a friend stopped over.

I'm going to be really lazy Sat ... I have a little of the kraut and sausage leftover. I think I will make some roasted carrots on the side and call it dinner. Or maybe more tomatoes, lol.

I don't mind the same thing 2 nights in a row; beside, I won't have to cook, :)

Well, I forgot about tonight.
My friend just bought a new house; so, she is having a small open house for friends. It's not fancy; but, knowing my friend ... she will have plenty of food.
I am pretty sure that is dinner.

Today at a friends for Labor Day.

Lady #3: Deviled egg dip (recipe to be posted) w/ham cubes, baby new potatoes, mixed bread cubes, celery, broccoli; to take to a party

Me: Labor Day Party at a friends - I'm taking my deviled egg dip w/ham cubes, bread cubes, mini boiled new potatoes, celery and broccoli; and a small fruit trifle
I know there will be sliders, mini brats; fried mushrooms w/dip, baked beans, corn on the cob, green and pasta salads; slaw; homemade ice cream and brownies. They pretty much have the same menu every year ... But, it is always great.

Salmon Night all Around ...

Lady #1: Poached salmon over sauteed spinach w/creamy dill cucumber sauce; baby new potatoes; chilled asparagus salad w lemon vinaigrette

Lady #2: Grilled salmon w/creamy dill cucumber sauce; grilled potatoes; grilled asparagus and tomatoes

Me: Grilled Asian salmon; sesame green beans and carrots; coconut rice w/scallions

I love salmon and have it a lot -- they all sound good, but the grilled Asian salmon sounds like something we would make but I also love asparagus so it will be a hard choice. How do you make the coconut rice?

Last night we had http://www.recipezazz.com/recipe/chicke ... raps-17290 with chips and salad. A good end of the week meal.

Today we go to Costco, so not sure what's for dinner.

I'm actually doing pizza tonight. Long story ... but s friend wants to stop by and talk ... and she is a VERY PICKY eater. Likes pepperoni pizza, no veggies. NO salad, etc. She is bringing it; so, no complaints - she just has lots of family issues; and just moved here - I think I am here only friend in town. I don't mind; but, I am sometimes to blunt. I say it like it is ... and she wants that sympathetic ear; which I'm not too good at.

Oh well. It is PIZZA night. I will make a salad for me. And, I will reheat my pizza with some mushrooms and peppers/onions; maybe tomato too. I just can't eat pepperoni pizza. LOL

Ellie, here is the coconut rice recipe. It is basically coconut milk, broth and scallions. I usually add some toasted coconut; but, it isn't necessary.

Also, toasted macadamia nuts are good to add too. It is really simple.

The salmon, I used an Asian glaze I got at the Asian market. Very similar to the Teriyaki La Choy glases at the basic grocery store. But, this was much better.
But, this will be tomorrow dinner ... But, just glazed and grilled.

I normally don't buy glazes; but, this was really good for a bottled glaze/sauce. I would definitely buy it again. It says a marinade or glaze.

When I go to ethnic markets, I always like to pick up something new and try it. This just looked good. I never know; always fun to give it a try.

Like Costco, I do Sams haven't signed up for Costco yet; but, I have been.

Sammies and chips; always good for dinner. I was actually looking forward to healthy tonight; but, oh well. I'm a single gal, so I know what it is to be alone. I will lend an ear tonight.

I'm sure the jacuzzi and a bottle of wine will help.

the coconut rice sounds good and I have 1/2 a can of coconut milk in the fridge.

I should of clarified my recipe sorry. Equal parts coconut milk and broth to cook the rice. I prefer a jasmine or plain cooking rice for this. Not the quick stuff.

Toasted coconut, if you want; and toasted nuts too. Either or both of them. And, scallions. Just 2-3 per 3 cups cooked. About 1 scallion per 1 cup of cooked rice.
