Change of plans...I'm still putting the casserole in the oven and the salad will still be here, but I'm running away for a few days so I won't be making the cauliflower. Which means the salad will be in the refrigerator when I get home on Monday even though it'll need to be thrown out tomorrow since I made it last Saturday. Or maybe I'll take it with me, as it really is pretty darn tasty. :lol:

Change of plans ... well, sort of.

My friend had to work to 7, late meeting out of town. We are still making our soup, but she won't be here till about 8 or so. We will having a make soup and wine party; which she can take her's home, and I can freeze mine.

In the mean time, about 8, when she gets here; we will be using my leftover steak I made the other night for sandwiches - but since there isn't too much - making quesadillas.
I added mixed peppers, corn, chipotle spices; and decided to make a quesadillas. Topped with salsa and sour cream; served with some greens; and, a fruit salad.
And, we will make the soup - and drink plenty of wine, lol.

I left it at home...realized it really needed to be eaten before yesterday and didn't want to risk it.

Tonight my niece is making meatloaf. mashed potatoes and gravy, and green beans. I can't wait. :)

Morning All!

Felix, probably best with the salad, although it sounded good.
Dis, I hope you aren't going to be under snow, but it sure looks like it.
Sue, hope you are feeling better.

Me, my gf had to work late, so our soup making project did happen but, very late. We did taste; and she never knew how that soup was so easy to make. She took home several container, and I have some in the freezer and 2 to eat.

We ended up using my small amount of beef from my sandwich this week. I added peppers to the beef/onion/mushroom mix, corn, and chipotles.
Make quesadillas with cheese; and topped with salsa and sour cream. Pretty good.
Just had a fruit salad on the side.

Tonight, guess what - the soup I made last night. Probably a small salad and fruit. NO cooking, just heating it up.

The diverticulitis usually doesn't bother me. It's something the gastroenterologist notes and moves on. I had a routine colonoscopy and brought home a bonus prize of some type of virus from that. I thought it might have been the diverticulitis flaring up, that maybe the doctor poked or probed it too much or maybe even perforated the colon, but no.
Still going on, nothing much they can do provided I stay hydrated and don't run a high fever. We know it's a virus because Bill got it a couple days after me. Just trying to rebuild my flora now with probiotics and ride it out. Bill already getting better, but my defenses were stripped so naturally just worse.
Hospitals. Places to get better and also are places to get sick.
Not much sleep this week and feeling very tired. It has been a round the clock rollercoaster. Ugh.
But soon.

Sorry you are feeling sick Sue. We are getting snow, but thankfully, the ground is warm enough it isn't sticking! Been snowing all darn day!

I had 6 gallon bags of those frozen tomatoes I put up last fall, so I needed to start using them up. I made vegetable stew today. Very, very good! I used some of my frozen corn, frozen green beans, tomatoes, and lots of veggies from my crisper.

I made homemade spaghetti sauce last week and some chili. I think I am going to be making more spaghetti sauce again tomorrow and freeze it for quick use later. I am down to 4 bags. Freezing tomatoes that way, really are handy and I am glad I did it!

Morning and TGIF !

Dis, I love your freezer tomatoes; I have been enjoying mine too. I love to chop them up and add to stews or soups. I bet your stew was delicious. Spaghetti sauce sounds perfect to make ahead - great to have on hand.

Nothing much today. I was looking forward to my trip to MN; however, the snow storm delayed our trip. Supposed to check out properties, and the weather didn't cooperate. The trip will be rescheduled.

Today's Cooking ...

Ladies #1 and #2: Card/Game Night - Antipasto tray, flat bread pizzas (pear prosciutto and swiss, fresh mozz tomato basil, caramelized onions and figs, zucchini and wild mushroom white pizza), chocolate panna cotta w/fresh berries.

Me: Cajun steak (my own cajun blend and grilled). I usually pan saute in butter ... but, I am serving the steak with cheesy grits - enough butter in that. On the side, sauteed tomatoes and green beans.
A friend may be stopping over; so, I said bring a steak - I got the rest. He likes desserts; so, vanilla ice cream with strawberries in balsamic would be quick. For my friends and my son, I always have vanilla ice cream on hand.

We never got around to the meatloaf yesterday, so we're having it for lunch today. And then dinner will be...something...later. We're doing movie night with snacks with the kids since spring break started.
